What is different about the convection oven that makes it the chef's choice? Operating on standard household current, the convection oven uses electricity to heat the air in the oven. A fan circulates warm air continuously so wasted heat cannot collect at the top of the oven. Since circulating air heats faster than does still air of the same temperature, food is heated more efficiently than with still air, resulting in cooking times 1/3 faster than regular ovens. The amount of time saved varies with the type of food cooked. With some foods, the convection oven cooks at a lower temperature than a regular oven, for about the same time. This results in electricity savings when compared with a regular oven.

Its actually a convection oven (not confection).

A Convectional oven has a fan in it that circulates the hot air around the food to make it cook faster. A conventional oven just has the heat element at the bottom.

Friend; this is a maketing tool. An oven, large or small is an oven. Somebody had the idea to put a fan inside - more moving parts and a fancy new name and price. The fan may dry out your food and May save 10% of time. It will need repairs.
The big difference is from an oven to microwave; oven will brown your roast, microwave not. Check Consumers Reports Annual Buying guide, their December issue at the library for independent advice. I think some micros even have a browning element. Think before you pay.

Confectional oven gets much hotter.Some people use them for pottery even.Good Luck!
