I've taken off a week of no working out, I do mostly cardio (running on a treadmill) I just don't have the time.
I am so worried that I am gaining fat and losing mucsles although I am making sure I eat right, and I don't go over my daily calorie limit.

I've worked out for too long too hard to reach this far, just to lose a little muscles. This really bothers me.

When You don't work out, your muscles start to get smaller.
If you eat too much calories than what your body requires daily and you don't eat healthy , then fat would replace muscle.

If you watch what you eat but don't work out, you are not giving the muscles the work out it needs to expand (grow) and also the nutrition it needs to maintain, so you will eventually start losing muscles, you will look skinnier , and definately not toned.

Every individual person's body is different because everyone's metabolism is not quite the same... so as to how long does it take for someone to start losing muscles depends a whole lot on their diet and metabolism. For someone ,,, a couple days and for others... a couple weeks. The best bet is not to quit working out for too long and get back into it as soon as you can or you will lose motivation! Which will lead to you losing too much muscles and then all that hard work you did will really be for nothing!

I hope this helps with your question!

You don't want that so to maintain toned muscles, work it out as soon as you can every other day for at least 30 to 45 minutes and do cardio every day for at least 30 minutes to maintain your body in a fat burning mode.

Always eat healthy and drink lots of water!!!

I read that you start to notice the difference in about two weeks.
