Most flights don't serve meal anymore. Why don't they just hire more air marshalls instead?

The FAA requires a certain number of flight crew including pilots and flight attendants, based on whether it is a domestic or international flight, and depending on the type of aircraft.
Granted, sometimes it seems that they aren't doing much except being chatty aftger serving drinks etc... but there is more involved in their service than people realize. They are often harrassed and taken for granted. They spend a lot of time away from home and often have to handle sick passengers or other medical emergencies. I work for an airliine, not as a flight attendant, but almost every day there is a medical emergency on some flight around the country and there can also be weather or turbulence problems needing quick reaction ..... can you imagine the chaos that would ensue without any flight attendants? Passengers could get unruly and rude and bully people around..... ((I've seen it)) air marshalls shouldn't have to play peacemaker among childish adults and need to remain annonymous.

Flight attendants are not just waiters and waitresses, they are members of the flight crew that are responsible for the safety and well being of the passengers during flight. They receive very specialised training to do their jobs.

I think it's law that they have flight attendants to do the safety demo and to aid passengers if the plane has to be evacuated. Also, you need to eat if your on a 12 hour flight and unless you want to fight over microwaves with other passengers in the galley.....

Except for international flights. I guess they still need them though, because they still give out the snacks and beverages. If they had vending machines in the planes, can you imagine everybody getting up to go to the vending machine. That would cause a chaos inside the plane!

Flight attendants are not waitresses. They hate when people assume that. They actually do a lot to get the plane ready to take off. Plus if the plane goes down, they have vowed to save your butt, and risk their own lives.

Yes, flight attendants always come in handy with assisting passengers with anything, such as giving pillows and blankets. Oh, don't forget the drinks up in first class! :-)
