Meatloaf
Treat your family to a classic dinner that is guaranteed to have second helpings.
Ingredients
2 lbs Ground chuck
1 Large onion, finely chopped
1 cup Breadcrumbs
2/3 cup Chili sauce or ketchup
2/3 cup Parsley, finely chopped
1 tb Worcestershire sauce
3 Eggs, lightly beaten
1 tsp Salt
1/2 tsp Black pepper
Preparation
Preheat oven to 350. Combine all ingredients in a large bowl and mix with your hands until well-blended but not overmixed.
Fill lightly greased 9 x 5 inch loaf pan with mix. Put pan on baking sheet and bake until meat is firm and has shrunk from the sides of the pan, about 1 1/4 hours. Pour off excess fat and let sit 15 minutes.

2/3 cup finely crushed saltines
1/2 cup onion
1 tsp salt
1/2 tsp rubbed sage
dash of pepper
1 1/2 lb. lean ground beef
1 cup ketchup
1/2 cup packed brown sugar
1 tsp Worcestershire sauce
Preheat oven to 350 degrees. In large bowl, beat eggs. Add milk, saltines, onion, salt, sage, and pepper. Add beef and mix well. Shape into loaf in ungreased shallow baking pan. Combine remaining ingredients, spread 3/4 cup over meat loaf. Bake for 60-65 minutes - drain. Let stand 10 minutes before slicing. Serve with remaining sauce.

1-1/2 lb lean ground beef
1 cup soft bread crumbs
1 egg beaten
1 medium onion chopped
1/2 tsp salt
1/2 tsp of garlic salt
1/2 tsp of cumin
1/4 tsp of pepper
3/4 cup ketchup
1/3 cup Worcestershire sauce
Combine all of the ingredients. Shape into a loaf baking pan and cover with aluminum foil and bake at 350 for 1 hour Let stand 5 minutes and serve with ketchup on top adds a nice zest to it

1 lb. ground round (beef)
1/2 cup chopped yellow onion
1/2 cup oat meal (raw)
1 egg
1/2 cup ketchup
2 tablespoons worchestershire sauce
salt and pepper
Mix it all up and form the meat into a loaf shape.
Place in 350 F oven for about an hour.
Topping:
4 tablespoons brown sugar
1/2 cup ketchup
mix well
About 5 mins before meatloaf is done, brush topping over loaf, leave in oven for 5 mins.....serve.

This recipe is a little different from the traditional meatloaf recipes:
SOUTHWEST MEATLOAF
Makes 6-8 servings
2 lbs. ground chuck
1 cup coarsely crushed tortilla chips
1/3 cup taco sauce
2 Tbsp. taco seasoning mix
1 egg, lightly beaten
½ cup grated cheese, such as a combination of cheddar and Monterey Jack
Combine all ingredients. Press into loaf pan. Bake at 325 degrees for 1 hour, or until top is brown and loaf shrinks from edges.

1 lb pork sausage
1 chopped onion
2-3 cloves of chopped garlic
a few shakes of parsley
salt/pepper to your tastes
1/4 tsp red chili flakes (optional if you don't like spicy food)
2 eggs
1 C Italian bread crumbs or oatmeal
Mix all of this together and form into a baking dish. Bake for 1 hour at 350 covered. This recipe is so good you don't need to smother it with ketchup to make it taste good!

I'm glad you asked me that because I cook from scratch everyday and believe it or not the best recipe is on the box of Lipton Onion/Mushroom Soup and Lipton Onion Soup . Only difference I do is use raw oatmeal instead of bread crumbs. It taste better and is healthier. Use ground chuck. Draw a smiley face or flower on top with ketchup. You can use bell pepper for flower stem and leaves. To me decorating the top of the meatloaf is the most fun; be creative. Even people who don't like meatloaf will eat this one.

1 small can diced tomatoes
3/4 cup of intstant oats
1 or 2 eggs depending on size
salt and pepper
splash of milk
plop into a pan and bake at 350 till done

mix the meat with and egg, onion, cracker's or if you don't have crackers you can use oatmeal add ketcup, mix it all in a bowl them put it on a safe oven dish add a little more ketcup on top spread all over bake or even microwave, oven for 30-35 min, microwave half the time i do all the time especially in the summer time.
