Take it home and use it that same day. If you buy frozen salmon, let it thaw in the icebox and use it that same day. Fish ain't meant to keep in the raw, my friend.

Have you ever tried a salmon "roast"? Delicious. Take your salmon and spread it with feta cheese, place spinish leaves over it and sun roasted tomatoes. Roll up, tie with string and roast itin the oven for about 20 minutes. Delicious and your "picky eaters" will be asking for more.

If it's really fresh, it shouldn't have a 'fishy' taste. However, if yours does, or if your picky eaters think it does, try covering it with thinly sliced lemons and baking it, or grate a little ginger root on it and bake it. Either one will clear away a fishy taste -- and they both taste good!

Try this recipe--even if you don't like sauerkraut. My husband doesn't like salmon or sauerkraut, but will eat this!
Salmon Manistee
2 lb. salmon fillets
1 lb sauerkraut
1 onion sliced
¼ c tomato paste
1 tbsp. butter
Juice of ½ lemon
2 hard cooked egg yolks
1 tbsp sugar
¼ c sliced black olives
½ c canned mushrooms
2 dill pickles, chopped
¼ c grated swiss cheese
Salt and pepper
Drain sauerkraut, place juice in saucepan, add tomato paste, butter and onions. Cook until well blended.
Add drained sauerkraut, simmer until soft and tender, adding more water if necessary.
Cook fish fillets in boiling salted water until tender. Romve and drain.
Add sugar, flour(1tbsp), a little vinegar, salt and pepper to taste, simmer for 5 min. Add sliced olives, mushrooms, dill pickles.
Butter a casserole, cover with ½ of sauerkraut mixture, place salmon on top, add another layer of sauerkraut, sprinkle with swiss cheese, bake until brown.
Serve with chopped egg yolks, sprinkled on top.

Not to be sarcastic, but it's fish. It's meant to taste like fish. You can try serving it with like a mango salsa or something else with strong characteristics. But ultimately, if they are going to be that picky just make a couple chicken breast on the side.

Steam it in beer for a few minutes, Make a bowl out of foil and lay the fish in it, add about 1/2 cup of beer, salt & pepper. wrap it tight and set it in the oven on 325 for about 20 minutes, check fish, then cook to preference.
