I was given an interview by a politician about the world of politics and learned some stuff. I'm sending a thank you note but I have no idea what to write besides "Thank you for your time, you were very informative". Please help!

Plain English works better than "flowery."

Be sure to thank the person for the opporttunity as much as for the time he/she offered.

You also mentioned that you learned something. Be sure to mention that, including a short detail about what is was. (you don't need to recreate that whole part of the conversation)

In fact, keep the note short, say, about half a page. You don't have to promise the person that you will vote for him or her forever, but that you look forward to meeting again in the future.

Short sweet and to the point. That would be the best way. Most people now days don't even think to send thank you notes, so it will probably be a pleasant surprise.

MOST DEFINITELY!! This could (and often does) make all the difference as to whether or not you get the job or the second interview.

make it more flowery, but do not worry too much - nobody will really read it.
