Im looking for some nice soup or casserole dishes to cook for the family, vegetarian ones please,we like all vegetables especially potatoes and carrots.

3/4 cup milk
1/8 tsp. pepper
10 3/4 oz. can Campbell's Cream of mushroom soup
2 (14.5 oz) cans cut green beans, drained
1 1/3 cups french Original French Fried onions

In a 1 1/2 qt casserole, mix all ingredients except 2/3 cup onions.
Bake 30 minutes at 350 or until hot..stir. top with 2/3 cup onions. Bake 5 minutes or until onions are golden.



GROUND TURKEY CASSEROLE

1 lb. ground turkey
1 can tomatoes or tomato sauce
3 c. cooked macaroni
12 oz. shredded cheese
Salt & pepper to season
Approx. tbsp. chili powder

Cook macaroni as usual, drain and set aside. Brown the meat and stir in the tomatoes and seasoning to taste, stir in macaroni and simmer a few minutes, put in a 2 quart casserole dish adding about three fourths of the cheese and mix, bake in 350 degree oven for approximately 45 minutes then take out of oven and add the last of the cheese on top and return to oven for about 5 minutes. Serve hot or cooled it is a very tasty dish


CHICKEN OR TURKEY CASSEROLE

1 1/2 c. uncooked macaroni
1 1/2 c. diced chicken or turkey
1/4 c. chopped pimientos
1 c. milk
1 c. shredded Cheddar cheese
1 c. drained mushrooms
1 (10 1/2 oz.) can chicken broth

Stir all ingredients together in a 1 1/2 quart ungreased casserole. Cover and bake at 350 degrees for 1 hour.

In Microwavable casserole dish & according to number of diners,
( I am single but cook enough for 3 meals) peel & quarter potatoes. Peel large carrots( You can use the small peeled one but they just don't taste the same). Cut them in chunks. celery cut into smaller slices, mushrooms & green peas.( I use frozen peas)
Add one can of your favorite campbells soup. I use a lot of
cream of asparagus, and mushroom. Add enough water to
mostly cover the veggies. Leave the cover with enough open space so steam can escape and cook on high till it is simmering, then cook for 25 mns on 5. It is a very easy & quick meal and
so good & nutritious.

Cut up potatoes with skins on, bite size. Season with garlic salt/pepper. Trickle enough olive oil to coat real good. Add cut up tomatoes from can (no juice). Mix all up. Put in oiled casserole dish and bake at 350 degrees, 40 minutes covered and 30 minutes uncovered or until potatoes are tender. Amounts depend on how many potatoes you use but, don't worry, you can't mess this up.

Broccoli/Rice
1/2 c. green onions
1/2 c. celery
1/2 stick butter
Saute chopped veggies in butter with season salt.
Mix together with:
1 can cream of Mushroom Soup
1 jar of Cheese Whiz (jalapenos)
1 bag of frozen broccoli
Put in a buttered casserole dish and cook for 30 to 40 minutes at 350 degrees (not covered)

Open a family size can of Campbell's Tomato Soup in pot. Add a can of milk and season to taste with salt/pepper if you want. Add fresh basil and simmer. We used to spend big bucks at a lovely Italian restaurant here in town to eat their "lovely" tomato/basil soup and then one day a waitress told me that's all it was. Go figure!

this is delish:
This is a clone of the Olive Garden Zuppa Toscana. Tried and true.
1 lb Italian sausage (I like hot sausage)
2 large russet baking potatoes, sliced in half,and then in 1/4 inch slices
1 large onion, chopped
6 slices bacon, crumbled
2 cloves garlic, minced
2 cups kale or swiss chard, chopped
2 cans chicken broth
1 quart water
1 cup heavy whipping cream

4-6 servings

1 hour 20 minutes 20 mins prep

Cook sausage in a 300°F oven for approximately 30 minutes.
Drain sausages on paper towels and cut into slices.
Place onions, potatoes, chicken broth, water, garlic in pot, and cook on medium heat until potatoes are done.
Add sausage and bacon.
Salt and pepper to taste.
Simmer for another 10 minutes.
Turn to low heat.
Add kale and cream.
Heat through and serve.

Potato soup
4-5 potatoes cubed
I can cream of celery
1 can cream of chicken
1 1/4 cup water
1 1/4 cup milk
7.6oz pkg instant mash potato flakes
put all in slow cooker except instant potaoes let cook for 2-3 hrs then add instant potatoes and cook another 2-3 hrs.

Boil until vegetables are tender
Cut up peeled potatoes and add to water; boil until potatoes are almost done
Add sliced polish sausage, cook till heated through
Add a little butter and some milk, be careful not to curdle the milk
Add salt and pepper to taste
Turn down heat so you don’t curdle the milk and add Velveeta cheese until it has the cheesy flavor you like.

The Best soups and casseroles, are the one's you get from Walmart. This also applies to people who want to brew their own beer and just can't quite get it right.

i just made this really good butternut squash soup... there was a recipie, but i strayed away from it so here is what it is...tentatively

3tbs olive oil
1 onion, thinly sliced
4 cloves smashed garlic
2 fresh sage leaves (i used basil)
2 med canned plum tomatoes (i used a can of diced tomatoes, im assuming they do the samething)
2 tsp salt
pepper (to taste)
2lb butternut squash, peeeled and diced
4c water
1 tsp balsamic vinegar

1. on med heat, heat olive oil and add onion+garlic+sage+ 1 tsp salt+ pepper, cook covered for 5 min
2. raise heat to med-high add tomatoes and cook until they break up, stirring occasionally (7 min)
3. add squash and remaining tsp of salt, cook until squash is tender (12 min)
4. add 4 c water, and let pot simmer uncovered for 20 minutes
5. remove from heat and let cool, then , in batches, puree
6. mix in balsamic and heat on med heat

if you want to you can add tofu and puree it in too for protein
