I have and they are pretty good! There are small bones in them but they do taste alot like chicken or mild pork.
Great stuff really.

Yes, I have had deep-fried rattle snake. But it doesn't come in "chunks". More like very small fillets. They are breaded and then deep-fried. And it tastes just like deep-fried rattle snake. Chicken is the only thing I've ever eaten that tastes like chicken. P.S. don't believe everything you read here...there are no bones, small or otherwise, in snake meat.

Once when i visited a family in texas in the country. We went camping and we caught this big rattlesnake. We skinned it and sliced it into large chunks, fried it in hot butter ate the snake with some corn,peas and potatoes. It was really good. It definitely tastes like chicken
I recommend you to never to throw any rattlesnake away after killing them. Fry them instead some recipes there
FRIED RATTLESNAKE
1 large rattlesnake, cleaned
1 qt. water
Dash of tarragon
4 tbsp. salt
Dash of thyme
1/8 tsp. paprika
Oil
1 cup flour
Soak rattlesnake carcass for 2 hours in salt water. Rinse and dry meat well. Cut meat into chunks to fry. Coat each piece with mixture of flour, paprika, pepper, tarragon, and thyme. Fry chunks of prepared rattler in oil until golden brown.

1/2 pound rattlesnake meat, deboned *see note
1 (8-ounce) bottle soy sauce (can substitute teriyaki sauce)
1 can olive oil cooking spray (recommended: Pam brand)
1 pound bacon cut into 1/2-inch strips
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
1 large white onion, diced
8 large eggs, lightly beaten
Garlic salt (recommended: Lawry's brand)
Black pepper, coarsely ground
3 bags rice, cooked (recommended: Success brand)
*Note: chicken can be substituted for rattlesnake meat
Wash rattlesnake meat thoroughly through a colander and marinate with soy sauce overnight in a plastic bag in the refrigerator.
Spray olive oil in a heated, nonstick coated wok and sear marinated meat. Set meat aside.
Brown the bacon in the wok. When the bacon is nearly done, add bell peppers and onion and cook until the vegetables are translucent and tender. Add the eggs and stir constantly until they are firmly set. Add rattlesnake to mixture and cook on medium heat for about 10 minutes. Stir in cooked rice, garlic seasoning and pepper, to taste. Turn heat down to keep rice from sticking to wok and mix ingredients well before serving
