I know they are a Mexican dish but I don't have a clue what they are.

fried burritto


CHIMICHONGAS (Mexican)

DOUGH:

6 c. flour
3 tsp. salt
1 1/2 tsp. baking powder
3/4 c. lard or shortening
3 c. warm water

CHICKEN FILLING:

1 (3 lb.) chicken, disjointed
1 med. yellow onion, diced
2 cloves garlic, crushed
2 tbsp. cooking oil
1 can (12 oz.) tomatillas (drained mashed)
1 tbsp. wine vinegar
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. fresh chopped cilantro
Need pierogi marker

Dough: Mix dry ingredients. Work in lard and mix well. Gradually add water, knead until dough is springy. Cover with damp cloth and let stand 15-20 minutes.
Filling: Cover chicken with cold water and bring to a boil. Reduce heat and simmer 1 hour. Cool, skin, bone and shred. Saute onions and garlic in oil just until transparent. Add tomatillos, vinegar, salt and pepper. Bring to boil low heat and cook 5 more minutes to reduce liquid. Add chicken and cilantro, continue to cook 10 more minutes.

Fry Chimichangas for 1-2 minutes until golden brown in an inch of hot lard or oil, serve hot, with one or more garnishes

The name is "chimichangas", a northern states of México dish. It is a flour tortilla stuffed with chesse, or ground meat, beans. It is shaped like a burrito, rolling the tortilla and frying it in hot oil. It has to be crispy. It is served with hot spicy salsa, or guacamole, or cream. Enjoy it!...

You mean chimichangas. They are tortillas filled with a chicken, rice, beans and olive mixture - rolled, fried and topped with a piquant avocado mix, sour cream and cheese, all served on a bed of lettuce. They are very delicious to eat. Here is a recipe for one.
1 1/2 cups chicken broth
1 cup uncooked long-grain rice
1/2 cup red enchilada sauce
1 1/2 onion, diced, divided
6 (12 inch) flour tortillas
4 cups diced cooked chicken breast, divided
1 pound Monterey Jack cheese, shredded, divided
1 (6 ounce) can sliced black olives
4 cups refried beans, divided
1/4 cup vegetable oil
TOPPING
3 avocados, peeled and pitted
1/2 cup finely chopped cilantro
2 tablespoons lemon juice
3 green onions, diced
1/4 cup finely chopped jalapeno chile peppers
1 tomato, diced
2 cups shredded lettuce
2 cups sour cream
2 cups shredded Cheddar cheese

DIRECTIONS:
In a medium saucepan combine the broth, rice, sauce, and 1 diced onion. Mix and bring to a boil; reduce heat to low and let simmer for about 20 minutes, or until rice is tender.
Meanwhile, heat tortillas in a large skillet (so that they are soft enough to fold).
When rice mixture is ready, spoon equal amounts of the following onto each tortilla: Chicken, shredded Jack cheese, diced onion, olives, rice mixture and beans. Roll tortillas, tucking in sides to prevent filling from spilling over.
Heat oil in a large skillet and fry the filled tortillas, turning, until browned on all sides. Drain on paper towels.
To Serve: In a medium bowl combine the avocados, cilantro, lemon juice, green onions, chile peppers and tomatoes. Mash together. Place shredded lettuce on a platter, topped with chimichangas, avocado mix, sour cream and shredded Cheddar cheese.

Think burrito...but not quite...around here (Southern OK) they're usually filled with shreded beef/pork (not ground meat like burritos) and deep fried or baked.
