Could you outline their general beliefs and point me in the direction of a book or website that would explain more in-depth?

There are all types of pagans. As a matter of fact Abrahamic religions lump in ALL religions that aren't theirs (Judaism, Islam, Christianity) as "Paganism".

It seems you know that Wicca is a subset of paganism (any non-christian or pre-christian belief structure). However, there is still no dogma, so it's really hard to even say what ALL wiccans believe. Here's a good website though: http://bluemoonwicca.org/synopsis.html

This book would be a good start: Wicca: A guide for the Solitary Practitioner by Scott Cunningham. This book is geared toward Wicca which is one of many Pagan denominations.

There are many traditions to Paganism (just as there is to Christianity such as catholics, protestants, episcopals, etc.)

Greetings... Paganism is a polythiestic path. The followers range from those who have very organized Sabbats and workings (as in Wicca) to those who are hedonistic in nature. Pagan means hearth worshipper, i.e. they worship at their hearth/home. Witchvox is a superior site for all investigations magical, especially for a beginner.

Paganism is mainly polytheism, which is the belief in more than one god-like entity, mainly the moon goddess, and some pagans practice witchcraft which many think is an "evil" practice but no it's not evil, the bible says this but that's bullshit, when people pray they use a cross and such to help connect their prayers to God. When people cast spells they use herbs, stones, the moon phases, etc. to direct their desire into reality, which is similar if you think about it.

There are many types of Paganism. I am Wiccan and I worship a Goddess and a God and honor the cycles of the moon and the seasons. Blessed be (thats a Wiccan blessing).

I have found in my 9 years of study & as a High Priestess, the best book out there for 'basic elementary' understanding of the Craft, is "To Ride A Silver BroomStick" by: Silver RavenWolf.

This book is easy to understand and is delivered in a format for beginners.
