Ingredients
135g/4¾oz plain flour
1 tsp baking powder
½ tsp salt
2 tbsp sugar
130ml/4½fl oz milk
1 large egg, lightly beaten
2 tbsp melted butter (allowed to cool slightly) or olive oil, plus extra for cooking
To serve

Method
1. Sift the flour, baking powder, salt and caster sugar into a large bowl. In a separate bowl or jug, lightly whisk together the milk and egg, then whisk in the melted butter.
2. Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for a few minutes.
3. Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter (or two if your frying pan is big enough to cook two pancakes at the same time). It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm (½in) thick.
4. Repeat until all the batter is used up. You can keep the pancakes warm in a low oven, but they taste best fresh out the pan.
5. Serve with lashings of real maple syrup and extra butter if you like.
Variations
1. For extra-fluffy pancakes substitute self-raising flour for plain flour and still use the baking powder.
2. Add a large handful of fresh blueberries to the batter before cooking.
3. Serve the pancakes with fresh strawberries and good vanilla ice cream.
4. Use half buckwheat flour and half plain flour and serve with maple syrup and bacon. You can also add one teaspoon of ground cinnamon to the buckwheat batter and serve with caramelised apple slices and thick double cream.

Pancake Recipe
- Pancakes aren't just for pancake day!!! They are delicious as a snack or for a leisurely breakfast:
Pancake Ingredients:
(Makes 4):
1 egg
300ml milk
Cooking oil
100g plain flour
Pinch of salt
Cooking Directions For Pancakes:
1. Combine the flour with the salt in a bowl and make a wee well in the centre of the bowl and add the egg.
2. Whisk/stir well whilst adding the milk. Pour the mixture into a jug.
3. Heat a wee bit of oil in a frying pan, ensuring it cover all areas of the pan. Pour some mixture into the pan (be heavy handed if, like me, you love thick pancakes), ensuring it's spread evenly.
4. Cook until one side is a nice golden brown colour and turn over to cook the other side - loons should attempt to flip this over as high as possible to impress the lassies!
5. Cook until the other side is golden brown colour and serve with lemon juice, sprinkled sugar, maple syrup or a favourite topping.

here's the recipe i use if I want just plain ole' pancakes
1½ cups flour
3½ teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 1/4 cups milk
1 egg
3 tablespoons melted butter
mix dry ingredients first. Add milk and butter and mix well. Add the butter and mix. Heat a griddle and cook. Enjoy:-)

Thekey to fluffy pancakes in not over mixing the batter, if ther is lumps it will cook out. Over mixing makes them tough

Separate 3 eggs and beat the egg whites till stiff. Mix them in at the end when you have the rest of the batter blended. Also, use buttermilk.

my brother in law makes the best pancakes - just uses bisquick, but he adds a small handfull of Jack cheese to the mix. It melts, you don't even know it's there, but it makes them so rich and tasty.

mix them the night before & put in fridg. They will be very thick in morning. You can add more milk if you want a little thinner,
