Tamarinde is the fruit of the Tamarinde Tree. It has a brown color and taste sour. The mexican use that a lot in their candies, which are usually a combination of sour, salt, sweet, and hot (spicy). I'm really not so fond of those candies. They even have tamarinde soda. People in suriname make tamarinde stroop which is very good when served cold. It's a beverage. Tamarinde is very healthy. It contains for example iron. The Trinidadians and Guyanase make Tamarinda Achar, which is some kind of spicy sauce that they use it with food.
Here's how to make Tamarinde Stroop (Tamarinde Beverage)
You need 1 lbs. dried tamarinde, 600 ml water and 2.5 lbs. sugar.
Mix the sugar with water and bring to boil until a syrup is formed. Pour the syrup over the dried tamarinde. Put into a plastic bottle or container. Close tightly. Let stand for about a week. Strain the syrup and transfer into thoroughly cleaned bottles.
How to serve:
Pour a bit of the syrup, like about 3 table spoons, into a glass. Add water until full. Serve ice cold. Take a sip and see if it's sweet enough. If not, add a little bit more syrup.
I hope you'll try this recipe. I am going to make this today.

Tamarind is the fruit pulp that surrounds the seeds of the tamarind bean, which grown on trees in the tropics.
Its taste is deliciously sour. It is often used to make a cordial that children love.
Tamarind is mostly used in South- and South-East Asian cuisine, so if you would like to experiment with it, look in some Indian or Indonesian cook books.

The Tamarind (Tamarindus indica) is the only species of the genus Tamarindus in the family Fabaceae. It is a tropical tree, native to eastern Africa, including parts of the Madagascar dry deciduous forests, but now introduced into most of tropical Asia as well as Latin America and the Caribbean.
I love Tamarind, I like to crack the shell and eat it buy itself, but you can use it for this fish and tamarind soup recipe as well, enjoy.
INGREDIENTS:
INGREDIENTS:
1 tablespoon vegetable oil
8 shallots, chopped
6 cloves garlic, crushed
1/2 teaspoon crushed red pepper
1/2 teaspoon ground turmeric
6 cups water
6 stalks lemon grass, ground
1/4 cup tamarind juice
salt to taste
2 pounds red snapper fillets, cut into 1 inch pieces
--------------------------------------------------------------------------------
DIRECTIONS:
Heat oil in a large saucepan over medium heat. Mix in shallots, garlic, crushed red pepper, and turmeric. Cook and stir until shallots are tender, about 5 minutes. Pour water into skillet, and mix in lemon grass and tamarind juice. Season with salt. Bring the mixture to a boil.
Stir snapper into boiling mixture. Cook 10 minutes, or until fish pieces are easily flaked with a fork.
