Shepherds pie is actually lamb, hence shepherd. Cottage pie is minced beef, not ever heard of chicken or turkey, but anything goes in cooking!

Yes you should be able to. Most shepard's pies I have had meat's substituted. It is just a layering, so I wouldn't see why not. When I make it; it is usually with leftovers of whatever I have had.

Yes, and remember that turkey breast has less calories because it has less fat...it should taste better.
I used it both in taco's instead of hamburg...can't taste the difference once it is seasoned...and better for you.

Yes. It won't make any difference just he flavor will be different. Chicken is a little milder in taste.

since when do you put chicken or any bird in a shepards pie the clue of the animal is in its name. (dah i think it might be lamb)
