What are the asian noodles that "get huge" when you fry them in oil. Thought they were rice sticks, but tried frying them and nothing happened.

You can get them in the Asian section at Ralphs.

Before deep frying, they are hard and almost transparent. Break them up because if you put a clump in the oil, only half of it will fry. Once they hit the hot oil, they should expand (but not "get huge") and turn white. Make sure you take them out of the oil quickly after expanding or they'll burn. I use them as garnish for Chinese Chicken Salad.

rice noodles, you don't fry them, you stick them in boiling water and they grow. Then you fry them with whatever you're making.

Are you thinking of fried shrimp chips?

I haven't had any for years. I remember that they were in a small blue box with a shrimp on the front.

you do not know how to cook them rite, try using olive oil as the base.

it's my guess that it's ramen noodles but i may be shooting in the dark with this answer.
