Crockpot Beans
3/4 lb. bacon, cooked, drained and crumbled
1 cup chopped onion
1 (16 oz.) can pork and beans, undrained
1 can red beans, drained
1 can great northern beans, drained
1 cup ketchup
3/4 cup brown sugar
1 Tbsp. liquid smoke
3 Tbsp. vinegar
salt and pepper
Put all ingredients in crockpot and stir well. Cover and cook on low for 4 - 6 hours.

VEG-ALL MACARONI SALAD
1 box ring macaroni or 1/2 package small ditali pasta (cooked and drained)
1 large red onion, diced
1 cucumber, diced
1 cup celery, diced
2 (16 oz.) cans Veg-all vegetables, drained
1 (16 oz.) package frozen vegetable of your choice, cooked as directed on package (I usually use corn)
1-2 tomatoes or red pepper
Mix ingredients together, adding pasta last - add pasta a little at a time, it's easy to add too much, just put in as much as it takes to still look colorful from the other ingredients
DRESSING
Combine together:
1 1/4 cup sugar
1 tsp. salt
2 tsp. parsley flakes
1 Tbsp. dill weed
3/4 cup white vinegar
1 tsp. garlic powder
1 Tbsp. prepared mustard
1 1/2 tsp. pepper
Heat in pan until sugar is melted - don't have to boil it, just until sugar is melted. Cool and pour over salad.
Refrigerate overnight before serving. Stir before serving.

ITALIAN BEANS PARMESAN
½ cup chopped onion
½ cup chopped green pepper
1 Tbsp. butter or margarine
1 (16 oz.) can whole new potatoes, drained and sliced
1 (14 1/2 oz.) can stewed tomatoes
1 (16 oz.) can cut green Italian beans, drained
¼ cup Parmesan cheese
In skillet, saute onion and pepper in butter until soft. Add potatoes; saute 2 minutes. Add tomatoes, cook over high heat until slightly thickened. Add beans, heat through. Sprinkle with cheese. Makes 6 servings.

REUBEN DIP
8 oz. cheddar cheese, grated
8 oz. swiss cheese, grated
8 oz. turkey pastrami, diced
32 oz. sauerkraut, well drained
¾ cup mayonnaise
Mix all ingredients together, put in casserole dish, and bake at 350 degrees for 30 minutes. Serve with Club Crackers.

PINEAPPLE CHEESE BALL
16 oz. softened cream cheese
½ tsp. Accent
½ tsp. garlic salt
½ tsp. finely chopped onions
¼ cup finely chopped green peppers
¼ cup well-drained pineapple
1 cup chopped pecans
Mix all ingredients except pecans. Form into a ball and put in refrigerator until firm. Roll in nuts.

My Great-Grandmother's squash casserole is great...
2 c yellow squash (measure after cooking)
1 can cream of chicken soup
2 tbsp grated onion
1 carrot grated
1 c sour cream
Pepperidge Farm Herb Seasoned Crumbs
salt and pepper
Cook squash, drain well. Mash, add onions, soup, sour cream, carrot, salt and pepper. Butter a casserole dish, and sprinkle a layer of the crumbs on the bottom. Add squash mixture. Cover with crumbs and dots of butter. Bake at 350 for 30 min.
** This is also good with a layer of cheese under the top layer of bread crumbs.
These dips make good appetizers:
Crab Dip:
8 oz cream cheese
1 T milk
1/3 c mayo
1 1/2 tsp horseradish
8 oz crab meat
2 T chopped onion
1/4 tsp garlic salt
Mix all ingredients, bake 15-20 min at 350
Vidalia Onion Dip
2 c chopped vidalia onions
2 c Hellman's mayo (must be Hellman's, other brands curdle)
2 c grated swiss cheese
Mix, bake for about 20 min in 350 degree oven. Stir a couple of times while baking.

Hawaiian Meatballs would make a great appetizer or side dish
Ingredients Putting it together
1 1/2pounds ground beef
2/3 ccracker crumbs
1/3 cminced onion
1egg
1 1/2tssalt
1/4tspginger
14 cmilk
1 tbsshortening
2tbscornstarch
1/2cbrown sugar
1 canpineapple tidbits,
1/3 cvinegar
1 tbssoy sauce
1/3 cchopped green pepper
Drain pineapple and reserve the syrup
Mix meat, crumbs, onion, egg, salt, ginger and milk. Shape mixture into balls. Melt shortening in large skillet; brown and cook meatballs. Remove meatballs; keep warm. Pour fat from skillet. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce until smooth. Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Add meatballs, pineapple and green pepper.

Here's an appetizer that's easy to make, and the leftovers can hold in the refrigerator if you want (overnight). Mix one packet of Good Seasons Italian dressing with an 8 ounce block of cream cheese. Spread a layer of this on slices of the party size pumpernickle or rye bread (it's in the deli/cheese dept at my supermarket). On top of the cream cheese layer, put a thin slice of cucumber. Garnish with a little fresh dill and serve. I suppose you could do the same topping on melba crackers, but the cocktail rye is easier to eat because it won't break when you bit into it.

This is delicious and it serves 12.
INGREDIENTS:
1 cup butter, softened
3 tablespoons poppy seeds
1 onion, grated
1 tablespoon Worcestershire sauce
2 tablespoons prepared Dijon-style mustard
2 (12 ounce) packages white party rolls
1/2 pound chopped cooked ham
5 ounces shredded Swiss cheese

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together butter, poppy seeds, onion, Worcestershire sauce and prepared Dijon-style mustard.
Slice rolls in half horizontally and set aside tops. Spread bottoms with the butter mixture. Top with ham and Swiss cheese. Replace tops.
Arrange rolls in a single layer in a medium baking dish. Bake in the preheated oven 10 to 12 minutes, until rolls are lightly browned and cheese is melted.

First of all open 3 cans of cut green beans you will need them people go for seconds and thirds. In a sauce pan lightly brown 2 strips of bacon and a medium onion in slight amount of olive oil and 2 table spoons of balsamic vinegar. Add all 3 cans liquid and all. put on the back of the stove cover on low for 2hours or the longer the better. please trust me. this is soul food and I'm Irish

My best side dish, and simple is 'Rice-a-Ronni' box mix. This is very versatile, can add onion, carrots, circle your meat on a platter with the rice, Very nice presentation. Comes in MANY flavors. I on occasion have mixed in ground beef or white chicken meat for a one pan meal. Delicious! Experiment, be creative. ENJOY!

Usually the sides I make somehow go with the entree. I have a couple recipes that work with chicken, pork or steak/london broil.
Rice
Break about 15 strands of thin spaghetti into inch long pieces. Dice half of a small onion. Saute the spaghetti in a pot with 2 TB butter or margarine until medium brown, add the onions and cook until translucent - noodles will be darker brown. Add 1 cup of long grain rice and stir to coat with melted butter. Add 2 cups of very hot water or broth (low salt beef or chicken - I omit the salt if I'm using broth), 1/4 tsp salt and bring to a boil. Reduce heat and cover with a lid. Let barely simmer for 20 minutes until all water is absorbed. Toss a half of small pack of frozen mixed vegetables on top of cooking rice (corn, carrots, peas) and let the steam thaw the vegetables and warm them through. Mix gently with fork to incorporate vegetables throughout the rice.
Seven Layer Salad
Slice one head of iceberg lettuce into shreds and layer into a large clear bowl. Cut up one or two bunches of green onions and dice 2 stalks of celery - layer both on top of lettuce. Thaw one small package of frozen peas and layer on top of onions and celery. Smooth one cup of mayonaise on top of peas and sprinkle with 1 TB granulated sugar. Sprinkle 1 cup grated cheddar cheese all over the top, then follow with crumbled bacon ((about 4 strips cooked and drained - or I buy the small jar of cooked bacon pieces -real not artificial- from the salad dressing section and use about 1/2 jar.)
Roasted Potatos
Peel 1 potato per person and cut into half inch pieces. Toss with olive oil (1 tsp per potato) and sprinkle with seasoning salt (to taste - I don't use much). Spread onto a large cookie sheet lined with parchment paper (makes cleanup very easy). Toss finely chopped onion into the potatos (about 1 tsp per potato). Roast in preheated 375 degree oven for 30 minutes, stirring after 15 minutes. Remove from oven and sprinkle on about 1 oz of grated cheese (cheddar or colby jack) per potato and return to oven until cheese is melted.
