Check out the AHA (American Homebrewers Association) - they will have a lot of good information for you.

There is a school in Chicago (Siebel Institute) that if well respected in training people to be brewers. The following is from their site:

"Siebel Institute: The First Name in Laboratory Services

Since 1872, the Siebel Institute of Technology has been providing analytical services to the international brewing community. With standards that meet the quality requirements of the world’s largest breweries, the Siebel Institute Laboratory Services division has built a reputation as one of the industry’s most respected brewing industry laboratories.

We offer tests covering raw materials, wort, finished beer, yeast & fermentation, and every other area related to commercial brewing. Our services utilize methods set by such groups as ASBC & EBC, with testing conducted by experienced staff utilizing state-of-the-art equipment at our suburban Chicago location. We offer complete customer support to help our clients interpret their results, and we can work with your brewery to build testing programs that affordably maximize the effectiveness of your brewery and the quality of your beers.

Trust the lab that the world's best brewers have trusted for over 130 years"

There is also the American Brewers Guild in Salisbury, Vermont and the American Craftbrewers Academy in Torrance, CA. Beyond that if you want to get really serious, go to Europe. The AHA website (www.beertown.org) has a list of some in London, Munich and in Scotland.

You can get a job at a microbrewery and work your way up as an alternative to going to school. You're taking more of a chance this way, but it's a way...it has been done.

There is quite a difference between a 5 gallon batch and a 500 gallon batch.
