Celiac is a genetic condition. You are totally intolerant of gluten and always will be, which means you can never stop for a while. There are ppl out there who are just gluten sensitive - they can tolerate some gluten and just get bloated or gassy or something, but a true celiac can become fatal if they have ANY gluten.
Quality of life can be great! I barely eat cakes, bread, pasta etc and i'm not even celiac. I have 2 firends who are celiacs though. You can eat rice or pototoes for your carbs with dinner....just be careful with sauces and soup as chefs LOVE to stick flour in them as a thickener :-(

my daughter has been gluten-free for about 3 years now, and her quality of life has improved dramatically - it took us awhile to figure out what was wrong with her, but she was sick all the time. Some celiacs don't have any symptoms at all, and therefor aren't diagnosed until they are well into adulthood, and by then there can be extensive intestinal damage. One big thing you can do to improve the quality of your life is to stop thinking of all the things you can no longer have, and start finding out all the things you can have - there are so many products on the market, and food labels by law are much more specific now, so it's easier to determine what you can and can't have. There are several cakes and cookies and even breads that are really excellent, some that I actually prefer to the "regular" kind! It's been quite a journey, but we've learned so much and it has made all the difference in the world for my daughter - it's well worth the effort.

I have been on a strict gluten free/wheat free diet for almost 5 years now. I never ever stop the diet because this is unhealthy to do to my body (or to anyone who has to be on this diet). In order to keep one's body healthy - getting the nutrition we need, energy we need, mental health we need - we have to stay on a strict GF/WF diet. Stopping the diet can cause serious side effects & further damage to your body which is not good. This can lead to more health problems, even some serious ones like colon cancers. I am not tempted at all to cheat or stop the diet for a few days. I know that the consequences of doing that are worse than eating the GF/WF diet. Stopping the diet can also lead to depression & other mental illnesses. There are still lots of yummy things that you can eat on a GF/WF diet - which many of them you can order online and have shipped anywhere in the world. If she likes chocolate, she can still eat M&M's candy & there is a really yummy brownie mix avaliable through Pamela's Products that is WF/GF(http://www.pamelasproducts.com/index.html)! If you need any help on finding good products, please visit http://www.celiacforums.com/ (I am a part of that forum & everyone is VERY helpful there). I also posted a few good websites under sources that might be helpful for you!!

I've been a celiac for 4 years as well and I know how your mother feels and why. It's not about not being able to have any wheat, oats, barley or rye.I think a glutten free diet is better for you. I miss not being able to go out and eat at all the resturants That I used to. The worst part is just being able to go on vacation or just taking a day trip and not have to worry about finding a safe place to eat. That part of this has been a bummer for me...
