I make my own salsa -
first you need about 6 large very ripe tomatoes, put them in a pot of boiling water, and remove when the skins start to crack. Peel off all the skins - while hot (use a towel so you can handle them) and place them adside.
Take at least 4 anaheim chilis (these are not hot) either grill them on the BBQ, or over the stove top til the hot side skins are charred, place them in a zip lock bag and let them steam. After about 15 mins you also need to peel all the charred skin off them. It's okay if some of the char remains, it adds a great smokey taste.
Take the anaheim chilies, and some jalapeno's ( I would use 3 or 4, but I like my salsa hot), either very finely dice, or use a food processor to chop up. Put in a good sized mixing bowl
Add one very finely chopped medium sized white onion.
Finely dice the tomatioes, you probably need to do this by hand, as the food processor mushes them. Try to remove as many of the seeds as possible, but it isn't going to hurt if some get in there, put in the bowl with chilies & onions
Next - spices and seasonings - remember, you can always add more if it needs it, these are just approximates
A must - cumin, a good palmful, probably at least 3 tablespoons. some oregano, about a tablesoon, salt and pepper to taste. Finsh with a good handful of chopped cilantro and 1/2 a lime squeezed into the bowl. Mix and eat.
I guarantee this salsa. You can use as many jjalapenos as you like according to your taste. Start out with one, and add until it gets to the heat level you enjoy. It will get slightly hotter as it sits, so better to under heat it if you will be serving later.
If you try this, let me know how it comes out. It may seem like alot of work, but every mouthful will be worth it.

Honestly the best thing to do is ask someone from the Hispanic culture what their recipe is. I have a friend that gave me her recipe and it's DELICIOUS! I even asked the lady at the farmer's market for a recipe for salsa verde. She was more than happy to help me.

This is sorta different from the usual, but real good!
Cinco de Mayo Salsa
2 cups chunky chopped tomatoes (can use the sweet grape tomatoes)
1/2 purple onion finely chopped
3 avocadoes chopped, chunky
1½. tubs feta cheese
2-3 Tbsp. Kraft Greek Salad Vinaigrette
optional: 1 jalapeno pepper, seeded adn minced
Toss and eat with nacho type chips.

i LOVE pico del gallo... AWESOME stuff... just dice two medium tomatoes, 1/4 of an onion, fine dice 1-2 FRESH jalepenos... use the juice of 1 lime, and 1/4 of a bunch of cilantro... YUM!!! (more like a relish than a salsa though)
My mother is notorious for taking a small can of UNSALTED tomatoes (like 5 oz) and a can of ROTEL roasted tomatoes, a handfull of cilantro, salt,and garlic powder, throwing it in the blender, and finishing a bag of tortilla chips within the next two days
