Yesterday I cut up some things for stir fry but my husband surprised me with take out. I'm sick of stir fry and I want to do something different but I'm a terrible cook. This is what I have all sliced up and ready to go:
chicken breast
onion
broccoli
cauliflower
mushrooms
peppers
celery
cilantro

Can anyone turn this into something that will impress my husband (and surprise myself)?

mmmm - TOUGH CHOICES HERE BUT i'M GOING TO TRY (sorry about the caps) Molly M's suggestion tonight and that fajita idea will be next - a nice fun Saturday meal. I will have to skip the lemon juice on the broccoli since my 2 year old won't eat the lemon (he will, however eat the broccoli and maybe even the cauliflower).

Molly m -that was great. I can't wait to try some of the other responses (we eat a lot of chicken). The only complaint was from my 12 year old but she complains about everything anyway. ;-)

Steam the broccoli, cauliflower and celery for a side dish and serve with fresh lemon juice.

Place freshly chopped cilantro in a half cup of white wine to steep.

Saute the chicken breast, mushrooms, peppers, and onion in butter until chicken breast has been browned (may wish to cut it up into chunks).

Pour wine and cilantro into pan and simmer. Turn down heat and slowly add sour cream to the pan (make sure the mixture doesn't boil or cream will curdle).

Serve chicken dish and the resulting sauce over a bed of rice or egg noodles.

(You can also substitute fresh tarragon for the cilantro or cream of mushroom soup for the sour cream).

Run and get some flour tortillas, and make chicken fahitas. Escpecially since you have the cilantro, too! Grab a red tomato while you're there and make it even better!

You can put that broccoli and cauliflower in a bag and freeze it for later, girl. Just pull it out for an easy side dish one night. Put it with some carrots and microwave it real quick with some steamed rice on the side and a meat when you're in a bind. Celery freezes well too.

Just throw your chicken in a preheated skillet with a little oil in it (about a tablespoon) and then add your onions and peppers. Wait till that's done, and add some salt and pepper to taste, maybe a little garlic salt, too. Then add your mushrooms and let them get done. Be sure to cook down the liquid!
Spoon it on top of a tortilla (they literally are a dime a dozen I think) and put your fresh cilantro and diced tomato on top and serve it up!

o.k. here we go trust me this will be great.You need 1 can of cream of mushroom soup and leave out the cilantro. I've never added peppers cause they are so strong when baked, but try...Place chicken breast on the bottom of a baking dish 9/12 or 8/10 layer all the veggies on the top of chicken, then the can of mush soup. This will be a nice casserole!!! Bake at 350 for 45 mins. I would put a layer of mozzarella cheese but if no mozz, any cheese would work!!Serve with some garlic bread, you have everything else inside the casserole. Enjoy Prisilla

Sounds like a great mixture to me! Coupla ways you can go here. Cook all then add a can of cream of mushroom soup, or a can of diced italian tomatoes........or both. Bake in the oven til it melts together. Sprinkle with shredded cheese.
Another variation is to add those bisquits (that come in a tube) cut them up into quarters (with a scissors for ease) put the complete mixture in a greased pan, and bake at 350º a minimum of 20 minutes. Be sure the bisquits bake fully. They should puff up nicely. Basically it's a pampered chef recipe.
Can do the same with fruit and the same kind of biscuits for a dessert. For mixtures, simply use your imagination!

Go out and buy yourself some wraps.

Sautee chicken breast, onions, and mushrooms in a bit of olive oil. Season with s+t, chili powder, garlic powder. When chicken is almost cooked through, add peppers and cilantro.

When cooked through, serve in tortillas, with shredded cheese, sour cream, and whatever else you like.
Serve steamed broccoli and cauliflower on the side.

That sounds like you have all the ingredients for a great stir fry.. and so that is what I would do.. cut the chicken breasts into small pieces of course.. or strips.. and cooking oil into a pan and all the ingredients you have plus chicken breast pieces and stir away.. I can taste it right now.

yes I can.., slice up some potatoes like au Gratin, grease a baking dish, layer the potatoes in dish take your other ingredients and mix in a bowl with diced fresh garlic and some italian seasonings, then place over top of pototoes then top with parmesean cheese and mozzerella bake in oven covered for 45 min at 350

Sounds like the makings of a good stew to me. Saute the onion, celery, and chicken, add some chicken broth and the other ingredients.

I think I'd add some rice, cream of mushroom and cream of chicken soup, Mix it all together. Maybe top it with mozz cheese and bake it.

After it's stir fried, add a zesty sauce to it. Combine some teryaki with something spicy like orange-ginger sauce, or hoisin, add garlic. Serve it over shanghai or singapore noodles for a change.
