...that I can half bake, put in like tomatoes and stuff, then put more dough over them, like a lid, and bake them longer, so they will come out nice and crispy on the outside with a tasty surprise in the middle. Thanks, your answers are greatly appreciated!

How about using crescent rolls? You can buy a whole roll of crescent rolls (you can get Pillsbury for like $2 or $3, a store brand for less) and that will contain about 8 rolls. Instead of rolling the crescent rolls onto themselves - like the directions say - you can put something on the inside. For example, you could put a slice of tomato with mozarella on one end of the dough triangle, and then roll up the tomato and cheese in the dough. Bake them at the same temperature and the same amount of time as on the product container.

Good luck and good eats!

You might try a basic tortilla or flat bread like recipe. It won't rise much but it might work. Here are my best calculation for it ( I make it from scratch and so I never measure) Take about 5-6 cups of regular all purpose flour (or use self rising and skip all of this. It already contains salt and baking powder) and just about 1/4 teaspoon salt and 3/4 teaspoon baking soda. Slowly add about 1 and 1/2 cups water and mix with your hands. It will be very sticky!!!!!! You may need to work as much as you can, stop, rinse off your hand and start some more. It will be able to eventually form into a big slightly sticky dough ball. If it's too dry, add some water (very little at a time) if it's too wet add flour. Let it rest (rise) for a couple of hours at least and covered with a dish towel. Split into two balls and form each into a big flat circle and use these to bake.

I also know from experience that pancake mix fluffs up wonderfully in the oven so it may be an option as well.

I think the guy above me mean calzone. If that's the case, do it the easy way. At most larger supermarkets you should be able to buy frozen premade pizza dough. If not, go to the baking section and look for bread mixes and most of the time they have a pizza bread mix.

3 cups flour to 1 cup water 1/2 tsp. salt and 1/4 cup olive oil, one package dry yeast. Place ingredients in a mixer with dough hook or food processor with dough blade. Knead until dough comes away from the bowl. Let rise 90 minutes, Punch down, shape, fill, let rise again, brush on egg wash, sprinkle on poppy or sesame seeds, bake 350 until golden.

What you are describing are stuffed pies.

Buy a prebaked deep dish pie shell or make you own. I'm giving you the link to the very best pie crusts I've ever baked.
