Slim Pickens was NOT a singer, but an actor (Dr. Strangelove and countless westerns). But the phrase is NOT Slim Pickens, but "slim pickins" a dialectal variant of "slim pickings", meaning that there was not a lot of choice.

Slim pickens means that there isn't much to choose from - a scarcity of whatever it is you happen to be talking about. Slim Pickens is also the character actor who rides the bomb down like a cowboy riding a bucking bronco in "Dr. Strangelove, or How I Learned To Stop Worrying and Love the Bomb" by the movie director Stanley Kubrick. If you haven't seen it you should - it is a masterpiece of dark humor.

"Slim pickens" means there isn't much to choose from. From the examply you gave it means that at the record store there weren't very many CD's (or tapes, records,...) to choose from.

To me, fat chance means you have NO chance at all, but slim chance means you have LITTLE chance. If you do the lottery you may say you have a slim chance of winning. The chance of winning is very small. If you are overweight and unfit and you run a race against a top athlete you would say fat chance of winning. The chance of you winning this race is zero. You know for sure the athlete would win.
