Firstly, I assume you're a teacher and not a pupil! Before I gave up drinking, people used to come to me for lessons - on what time to start drinking, for as long as there was d, an a or a y in the day of the week, ANYTIME was drinking time! I would think nothing of getting home from a night-shift at six in the morning and get the top of the scotch bottle - and it used to evaporate so quickly.....
However, on a more serious (and sober!) note, I think that the time you start drinking really DOES depend on your work patterns rather than much else. It's no good saying "a good time to start is 8pm" if you're a driver - you'd be over the limit next morning, so the sensible things to consider are 1): How much are you likely to want to drink, and 2): when do you next have to drive or work. If you don't have to drive, then consider how your work performance will be affected (if at all). I gave up a few years ago from a litre and a half of scotch every day, and prior to that I was so used to drinking so much that a certain colleague at work asked me if I was ill one day when I turned up sober! In your case, I doubt whether you'd want your pupils to see you half cut, and I wouldn't dream of thinking that you would present yourself in such a condition anyway, so why not start earlier and stop earlier if you enjoy a little drink or three. That way, next day nobody will be any the wiser! In the meantime to all drinkers, please drink wisely and enjoy it.

11 AM (when most pubs traditionally opened) but noon with at least a pretence of a meal or snack can be considered more civilised.
Otherwise for Xmas day, birthdays, anniversaries and valentines' day etc. you can have a champagne breakfast. no other drink though. If you go swimming on Xmas day itself you can have a large cognac or armagnac when you get out of the water, but not before you go in. There is an argument that any sort of hardy outdoor winter sport allows for frequent nips of whisky or rum from a hip flask, but not before 9AM.
If you are somewhere and they are doing freebies - like flights in the morning - then it's acceptable to have something short with a mixer - say a gin and tonic - just for fun. Beer and those little bottles of wine aren't very dignifed though.
The only other exception is in the van after a nightshift. Cans of warm Kestral at 5, 6 or 7AM onwards are perfectly acceptable in my experience.

9.00pm is a great time to have a drink, especially if you are not working the next day or you just had a crap day at the office. But seen as its Friday i'll be heading to the pub straight after work.

It depends.
On a workday, having a drink at lunch is OK, and anytime after work is OK.
On a weekend, any time after noon is perfectly acceptable.
If you're on holiday, it is acceptable, IMO, to start drinking after your first cup of coffee (or tea) in the morning. Before then would be boorish!

After 5pm. I like a glass of white wine any time from around lunch on though. A smooth scotch on the rocks helps the evening flow nicely.

I don't think there's a hard and fast rule ... personally I fall asleep in the afternoon if I drink at lunchtime, so I prefer evenings.
If that's the earliest you have a drink then that's fine ... on a night out I guess you start when your mates start so any time is a good time!

You can start drinking at the time of day that you have completed your tasks and can relax.
There are times that I have gone fishing, got the boat in position and had a beer before the sun came up!

On vacation I start my day with a mimosa or a bloody mary and continue on from there! But on an everyday sort of day I would think a before dinner cocktail would be acceptable.
