Just about most cheeses, but Limburger and the rest of 'washed' smelly cheeses are a bit too stinky for me to appreciate.

American is a bit too processed for me to really like.

Government cheese!!! Its free!!! Seriously - I like Brie from France, Gouda, and good old World Champion Wisconsin Cheddar!!! Good swiss cheese too.

Asiago cheese is the best!!! Especially if you make alot of Italian dishes.. If you have never had this cheese before its a little bold but also on the sweet side as well.. Good stuff!!

almost all types of cheese but I find that Italians and particularly those in the northern part of Italy make the best cheese in the world. try some of their goat cheese and you'll be delighted.

Roquefort...with a nice salad. Or feta in a cucumber, tomato and olive oil salad. Or cheddar. Or Beaufort, gruyere and comté melted to make a delicious fondue. *Sigh* Would have been easier if you had asked what type of cheese I DONT like.

Brie is my favorite just to eat. But swiss, parmesan, mozzarella, all of it is so good! I'm not a big fan of bleu, but even that I like to eat on graham crackers (the sweet balances the strength of the cheese)

grilled cheese sandwich with fresh parmasean
i love mozzarella on it's own!
aged cheddar is always good
melted brie with apricot jam on fresh bread

I like cheddar cheese for it's mature taste that is has when you cook or eat it with any thing.
