I usually have it with ready salted. You dont want to stronger flavour as it will dwarf the taste of the cheese. This combination allows you to taste both the cheese and the crisps.

Salt and vinegar, my fave crisps are cheese and onion and smokey bacon, but just lately I've been having salt and vinegar crisps on bread and butter (no cheese) and they are really lovely.

Salt and vinegar by far. It balances out the dairy taste of cheese and gives it a bit of bite! YUM! You have made me sooo hungry now!

Get some salt and vineger, ready salted and cheese and onion, put them all in a bowl and mix them up, lovely on cheese sandwiches, try it and see !.
