Once my mum did damson vodka. Half bottle of vodka, the rest filled with equal amount of Damsons and sugar. Leave to stand with lid on for a few days and pour, its quite strong but the damson's make it taste lovely.

well if you leant over the wall to get them you are supposed to give them back. Strictly, if they were on the branch over your side of the fence you have to wait for them to fall before taking them.
So you may have contraband damsons. Whatever, you can make fantastic damson gin by steeping them in 1/2 bottle of gin topped up with sugar. Shake them every day for a few weeks until all the sugar has completely dissolved and then store it until at least Christmas. Then drink it. Lovely with sparkling water or tonic and very nice straight

HERES WHAT TO DO IT IS VEGATERIAN
MASCARPONE DAMSONS
IngredientS
110g/4oz mascarpone
2 tbsp icing sugar
1-2 tbsp damson juice
8-10 damsons
½ glass red wine
1 orange, zest only
2 tbsp caster sugar
Method
1. Place the mascarpone and icing sugar in bowl and beat together.
2. Lightly stir in the juice to create a ripple effect.
3. Heat the damsons in a non-stick frying pan and pour in the red wine.
4. Heat gently for 2-3 minutes, then add the orange zest and caster sugar.
5. Heat for 5-6 minutes, stirring occasionally or until the damsons soften.
6. Remove from the heat and transfer to a serving plate.
7. Spoon the cream mixture on top and garnish with mint.
8. Serve.

You'll need:
A large plastic bucket WITH a tight lid.
1 2 lb bag of sugar
1 - 2 tsps wine yeast
1 - 2 tsps Marmite
1 gall water
Wash and pierce damsons (use small kitchen knife) - place in bucket. Add other ingredients. stir to allow sugar to dissolve. Place bucket in warm dry place (airing cupboard is too warm)Place lid firmly onto bucket and leave for approx 3 - 4 weeks. Carefully scrape mold off surface of liquid (it should be possible to lift it off all in one piece). Leave bucket a further 2 -3 weeks repeat process until liquid no longer throws up mold. Strain liquid into Demijohn and top up to shoulder of jar with more water and add (water filled) air lock - allow wine to continue fermenting until it no longer bubbles through air-lock. Top up again to 1" below neck of demijohn. Leave for further 2 - 3 weeks. Strain and filter (thoroughly) you should now have 1 gallon of Damson Wine (Delightful and very tasty).

stew the damsons,plenty of sugar ,they are very tart, and make a nice damson crumble with a pan of custard ,yummy.
