Optics/photonics. Light is going to be integrated into circuitry more and more.

Electrical- This isn't going away. Circuits will grow more complex and be integrated into more applications

Computer/software- If you're good at this, you'll be in demand.

Civil engineering - we build buildings, design roads, clean up the environment, design landfills, etc, etc, etc. It's a broad enough field that you can use a civil degree and take off in just about any direction that you want. It's not as glamorous or well-paid as some of the other fields, but there's always plenty of jobs. Another benefit - we're needed everywhere. Not just big cities or wealthy nations. You can live wherever you want.

Mechanical Engineering assumes the make-up of multidisciplinary forms of engineers. Many mechanical engineers are prepared for higher engineering degrees in other engineering disciplines without much trouble.A mechanical engineer should always have no problem finding a job.

Nano engineering, making it small is where the future lies. Everything will need to be redesigned to make it small. The more of anything you can cram together the better it works. Computers, body armor, LCD, solar cells.... Whole nano robots that can go into the body to wipe out cancer and cure sicknesses.

Nano technology fits under material science so Material Engineering is where it is at.
