I know, one is black and one is white, but what makes them different?

In my area of Scotland the white puddings are usually suet, oatmeal, onions and spices. And vegetarian white puddings are available which are made with vegetable oil or vegetarian suet. But there is variation (see link).

Black pudding is a blood sausage for which the recipe varies from place to place (see second link)

The immediate difference between the two is that white pudding is not made with hog's blood while black pudding is made with it.

Black pudding has got cows blood mixed into it, giving it it's 'black' colour. White pudding has no blood in it and tastes foul. Stick to Black pudding,it's the best!!

Black pudding is made with pigs blood and fat and white pudding is made with offal, oats and is more like a sausage than a clot. Black pudding is great with stewed apple and white pudding is nice with bacon but it is seriously salty

Black pudding is pretty straightforward clotted pigs blood.

What happens though, when pigs blood sits for a while, is that the plasma from the blood separates from the blood cells and this is what white pudding is made from - the separated plasma that is skimmed off the top of the blood.

Black pudding is made by cooking the blood of an animal with meat until it is thick enough to congeal when cooled. i.e it is a scab!
White pudding is made using pork and oats but no blood.In Scotland there is no meat in white pudding, it consists of suet oatmeal, onions and spices.

THey are practically identical except the White pudding has no blood.

Different ingredients..Black puddings gets all its colour from the pigs blood inside it..White pudding is more of a liver sausage taste..
