The traditional 'boozers' are dying! Will they be replaced by upmarket Gastro pubs? Or, is there an alternative to expensive food and flash wine?

The traditional boozers need to die. The world is depressing enough...then to have to go to some skank dive serving warm Bud Light and greasy bar food in a place that also smells like a the inside of a wet ashtray. I mean why in the world would anyone want good healthy food and a decent microbrew after a long day? Like it or not, thats the trend...and the masses now have a taste for better bar food and beers with flavor. If you're struggling with an outdated concept...maybe just go to the next level, versus re-conceptualizing.
How about a pub that serves upmarket Pub Food...do wings a couple of different ways..Buffalo and Asian style..
Burgers and Buffalo Burgers (Buffalo is not expensive and healthier)..a couple of Salad options..Grilled Steak Salad and a Blackened Chicken Ceasar Salad...dare I say offer vegetarian choices (stirfrys, veggie burgers and even a cheese/fruit/bread combo)...woks are inexpensive to keep in a kitchen (so are vegetables, but use good quality). Also wine consumption is way up...no need to go crazy but install a good above-average wines by the glass menu. I'm not saying become a fu-fu wine bar, just offer some decent choices and I think you'll be surprised by the revenue. Your wine rep will set you up with it and guide you through some choices that are suitable for your place, and in most cases print a by-the-glass menu for you for free.
Use the best quality food ingredients, keep it relatively basic but with a bit of an edge...prepare the items as healthy as you can...clean up the place if it's not already, some paint and good lighting make a huge difference, even go crazy and put some candles on the bar...come in at a price above the dives of course but well below the "gastro pubs". You'll appeal to both sides more so than one or the other. Ta-da, a place for everyone and lots of business.

Hopefully not, I don't think people really give two shits about your crappy plastic pubs. Try giving people what they really want, an ATMOSPHERE. These gastro-pubs are like a Samaritans waiting room or an airport lounge at the best of times

i dont know what a gastro pub is but anythings better than the dingy smelly smokey pubs you have at the moment. i like upmarket places, they are more sophisticated. especially if they're non smoking, it means i can go in and take my daughter for a meal. we need somewhere that caters for people who dont like the grotty atmospheres of the typical local.

the market will in time ascertain what ppl want. if ppl dont want those kinds of pubs then they cant survive as businesses
