When I was growing up in San Diego, my Grand mother made a cake that was made out of White chocolate and had white choclate in the frosting. When she passed away in 1988, the recipe could not be found. I have tried for years to find it but with no luck. I would love to share it with my husband and three boys. If anyone has such a recipe I would love to have it, please.

White Chocolate Cake/white Chocolate Frosting

4 Egg whites
4 oz White chocolate baking bar
--- chop
1 c Butter
2 c Sugar
4 Egg yolks
1 ts Vanilla
2 c Sifted cake flour
1 ts Baking powder
1 c Buttermilk
1 c Coconut
1/2 c Chopped pecans
White chocolate frosting:
4 oz White chocolate baking bar
--- chop
1/4 c Butter
1 ts Vanilla
4 c Sifted powdered sugar
3 tb Water; (3 to 4)

In a large mixing bowl let egg whites stand at room
temperature for 30 minutes. Meanwhile, grease and lightly
flour three 8" or 9" round baking pans. Set pans aside.
Place chocolate in a small heavy saucepan over very low
heat, stirring constantly until chocolate begins to melt.
Immediately remove from heat and stir until smooth.
In a large mixing bowl beat butter and sugar with an
electric mixer on medium speed until fluffy. Add egg yolks
and vanilla; beat until light. Add chocolate; beat until
combined. Stir together flour and baking powder.
Alternately add flour mixture and buttermilk, beating on
low speed just until combined. Thoroughly wash beaters. In
a large mixing bowl, beat egg whites with electric beater
on high speed until stiff peaks form. Gently fold egg
whites into batter; fold in coconut and pecans. Spread
batter in prepared pans. Bake in a 350 oven for 25 to 30
minutes or until cake is golden and springs back when
lightly touched. Cool cakes in pans on wire racks for 10
minutes. Remove cakes from pans; cool completely.
Prepare White Chocolate Frosting:: To assemble, place first
cake layer on a large serving plate; spread with 3/4 cup
frosting. Top with a second cake layer; spread with 3/4 cup
frosting. Top with the remaining cake layer. Stir 1
tablespoon hot water in remaining frosting; pour over top
of cake.

Frosting-- Place chocolate in a small heavy saucepan over
very low heat, stirring constantly until chocolate begins
to melt. Immediately remove from heat and stir until
smooth. Cool slightly. In mixing bowl combine melted
chocolate, butter and vanilla. Beat in powdered sugar and
enough water to make of spreading consistency. Makes about
2-1/2 cups. Makes 12 servings.

WHITE CHOCOLATE CAKE

CAKE:

4 eggs
2 c. sugar
1 c. butter
1/2 lb. white chocolate
1 c. coconut
1 c. chopped pecans
1 c. buttermilk
2 1/2 c. plain flour

FROSTING:

8 oz. cream cheese, soften
1 box confectioners' sugar
1/4 c. butter
1 tsp. vanilla

FILLING:

2/3 c. orange juice
1 sm. can crushed pineapple (8 oz.)
3 tbsp. cornstarch
2 tbsp. orange rind (opt.)
1 tbsp. butter
3 egg yolks

To make the cake, melt the white chocolate in a double boiler, as this is melted cream sugar and butter until fluffy, then add the eggs, one at a time, then add slightly cooled chocolate to this mixture as you beat. Beat well, then add flour and buttermilk and beat until smooth, now add pecans and coconut and mix well. Place in 2 (9") round pans that have been greased and floured and lined with wax paper (bottom). Bake at 350 degrees for about 30 to 35 minutes or until light brown.
After cakes are cooled make the filling by first separating the juice from the pineapple. Put the cornstarch in the juice and set aside. Place the remaining ingredients in a pot and stir over medium heat until the mixture begins to steam. Then add the juice-cornstarch mixture and continue stirring until the mixture thickens. Let cool and spread on the bottom layer of the cake.

Now place the top layer on the filling and make the frosting by mixing the cheese and butter until creamy, then add the sugar and vanilla and beat until smooth. Now frost the sides and top of the cake. You may decorate the cake with pecan halves.

* 2 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 6 (1 ounce) squares white chocolate, chopped
* 1/2 cup hot water
* 1 cup butter, softened
* 1 1/2 cups white sugar
* 3 eggs
* 1 cup buttermilk

* 2 1/2 tablespoons all-purpose flour
* 1 cup milk
* 1 cup butter, softened
* 1 cup white sugar
* 1 teaspoon vanilla extract

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Sift together the 2 1/2 cups flour, baking soda, baking powder and salt. Set aside.
2. In small saucepan, melt 6 ounces white chocolate and hot water over low heat. Stir until smooth, and allow to cool to room temperature.
3. In a large bowl, cream 1 cup butter and 1 1/2 cup sugar until light and fluffy. Add eggs one at a time, beating well with each addition. Stir in flour mixture alternately with buttermilk. Mix in melted white chocolate and 1 1/2 teaspoon vanilla.
4. Pour batter into two 9 inch round cake pans. Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center of the cake comes out clean.
5. To make Frosting: In a medium bowl, combine 6 ounces white chocolate, 2 1/2 tablespoons flour and 1 cup milk. Cook over medium heat, stirring constantly, until mixture is very thick. Cool completely.
6. In large bowl, cream 1 cup butter, 1 cup sugar and 1 teaspoon vanilla; beat until light and fluffy. Gradually add cooled white chocolate mixture. Beat at high speed until it is the consistency of whipped cream. Spread between layers, on top and sides of cake.

use a basic chocolate buttercream icing recipe and substitute the dark chocolate for white chocolate. same for the cake. find a chocolate cake recipe that uses melted dark chocolate and substitute. allrecipes.com and foodnetwork.com are both good resources. good luck.

This might not be the best answer, but keep trying to look for it, I bet one day you will find it, nothing is unfindable.
