Just FYI, Judaism does not follow the bible. They follow the Torah, which is for the most part the old testament of the Christian Bible. Christians use both pieces, the old and the new testaments in religious studies.
Now, to answer your question:
The new Testament:
The first four gospels where all written within 25 years of the death of Christ (Jesus) by either by people who knew him well or through studying his life. Imagine writing a biography of John F. Kennedy, starting today. Except that these were people who had all heard him speak and had seen him or his miracles. Luke is believed to have interviewed Mary personally for the details of Christ's birth. John was one of Jesus' twelve disciples as defined by the other gospels.
Acts is a book of basically history.
The remainer of the New Testament's books are primarily letters of instruction and guidance. Many of these letters were written by Paul, in front of whom Jesus appeared (several years after death).
Revelation is the last book in the bible and consists of the visions of Apostle (Disciple of Jesus) John while he was on the island of Patmos, written around 60 years after Jesus died. This book is the latest any book in the bible was written.
Old testament is really broad, so it's hard to explain, but its pretty much history and prophecy.
As for your statement that the books were written more than 100 years after, I think you are confusing the bible with the gnostic gospels, which were thrown out by the church as rubbish and waste.
Finally, the way that Christians know that the new testament is factual (the gospels) is that both Islam and Judaism recognize the major events in Jesus' lifetime, though Islam believes Jesus was never killed. Nonetheless, the existance of Jesus cannot be denied.

It's hard for me to believe in the PHYSICAL Bible. I'm not a historian, far from it, but I do believe that pen, ink and paper were not invented before, or during, the times the Bible takes place. So how did those people write ALL that stuff down? I'd say they had to carve it, b/c there was no where to write it. And if that's the case, it would have taken YEARS AND YEARS to write. And then that brings the next question; where did all those carvings go? And why are there so many versions of the Bible? Honestly, I believe in what the Bible represents; being kind to others, peace, the 10 Commandments, all that stuff. But as far as every single solitary word, I'm really not sure. Stories get passed down from generation to generation. By the time the Bible went to "print" as we know "print" today, I'm sure MANY things got turned around, misplaced, misunderstood. The physical Bible was created by man, no doubt. I do believe however, that it's message is one of peace.

Some people need the Bible to be literal, play by play historical fact. I simply have faith that God made sure his messages for us didn't get lost through the ravages of time. The KJV was defunct by the 20th century, so biblical scholars went to much earlier preserved sources fore the revised standard version. In the 60's, many people complained that version was too dry or flat, so a group tried paraphrasing the New Testament in everyday language, and that became Good News for Modern Man. That project eventually grew into the New International Version. Pastors from many seminary colleges praise that translation as bringing the Gospel to life.I'm personally quite happy with the RSV, since everything is there.

First, Jesus was an actual figure. Now whether you choose to believe in the spiritual interpretation of Jesus is up to you.
Second, I think that this question was asked out of a deep desire to understand. I would suggest, if you are open to this, pray and read James 1:5-6. This verse lets us know that if we truly want to know and have faith then God will help us learn the truth.
Third, from a historical perspective, you have to realize that the three major religions rely on the first 5 books of the Bible. I guess this has always helped me understand that there must be something to this book.
Fourth, most of human history hasn't been recorded in the fashion you speak of journals and such but yet we still believe in those events. So just because someone wasn't present doesn't mean it didn't happen. Homer comes to mind, and no I don't mean Simpson.

You propose a good, noble question. However, I'd encourage you to give a little more study into the books accepted by those of the various Jewish faiths. Generally they accept that Pentateuch and some others but not the "New Testament."
Regardless, I appreciate your forthcoming with the fact that most of the writings occurred long after the events and by "ghost" authors.

What I find most fascinating is how there supposedly was this Jesus, making a mess of the Roman territories and the Romans were meticulous record keepers, yet the Romans left no record of this supposed "Jesus."

No. The Jewish religion rejects the Christ. Even that was foretold in the Old Testament and the New Testament. The Jews must have a different interpretation to that scripture, embedded by the very Pharisees that Jesus had disagreements with. How about that?!

I think that you are looking as to the physical nature of the Bible. I look at it as the living word. To understand it is a miracle in itself, and I mean that literally. So many that I've communicated with online have proven that to me. An Agnostic and an Atheist are the best examples of horrible interpreters. They get lost on the simplest verses. It's amazing.
The reason why the Bible can still be understood and reasoned out is because God has a way with history. Somehow He made it come through. I am not one of those who think that the Bible is inerrant, but it is inspired. There are all kinds of examples of why I think this, but inspired is good enough for any of us. Inerrant is, I'm afraid; an illusion, and an errant way of thinking.
As to when the New Testament was written. I don't think tht most people who merely look at numbers have it right. They don't have the understanding that God brings.

I can give you the best, honest answer:
Don't pay so much attention to the "words" and pages of the bible.
Pay attention to the messages its trying to teach.
I've honestly never read the entire bible, and I don't think Jesus expects everyone to. But what's important about that book, that was written 2000 years ago, is the message of love, life, and hope, that Jesus, his disciples and the prophets were trying to convey.
Jesus DID exist, he was a man, its a historical fact. The only debate is whether he was God's only son or not. Regardless of whether you believe he was sent from heaven to deliver us from our sins, you should take a look at his life, through the bible, and try to understand the message, and how we should live our own lives here on earth.
One last thing to point out: Even historical scholars are amazed at the accuracy of the Bible. Exact events at specific times (not talking about the miracles) have all been tested and confirmed by historians as being extremely accurate.
So in terms of the Bible's accuracy in regards to its credibility, its a pretty accurate history book.

I'm sure for the following reasons
1. The bible has a sense of authenticity to it. There are a few discrepancies in accounts of events especially between the Gospels, but this really gives it authenticity if someone wanted to make it "appear" perfect they would make everything line up perfect.
Overall however the bible makes sense, the important thing is to know what you are reading someone portions of the bible are ancient laws, others or are historical accounts, and others are letters between friends. You must take everything in context and study it carefully, then it make sense.
2. What the bible says does work. No you won't be perfect if you follow the bible and many claim to follow the bible and don't but I've seen people completely and radically change from the inside out because they chose to believe in Jesus Christ.
3. The bible is no less reliable then other historical documents of it's time.

It's easier for a non-rebellious person to exercise Faith than one who questions everything. It's not being naive or easily tricked or fooled. Being a believer in Christ goes deeper than merely being able to explain it on a Yahoo answers search engine. If it were that easy to explain why the Holy Bible was 100% inspired by God..... Then we'd all be Christians. That's not the case every one of us was given free will and a mind to think on our own. Apparently, Eve didn't think too much of Gods word either. God has a way of making people see in his own time, so me explaining how and why I believe isn't going to change your mind at all. My experience which led me to believe, most people wouldn't relate so this question will continually go unanswered. If Jesus himself came an told you why it's the Truth I'm sure most people would be like "Prove it, Let me see some magic tricks". It takes pure heart to understand, not words. When it's time for you to see he'll show you it's real. If you close your eyes to the truth....................Well, you won't be lonely in Hell that's for sure, judging by a lot of the comments on this post.

actually peter paul and mark and others did write about the events at the time. writing journals and recieving and sending letters. but most of it was written after the fact, some of it is history and some is made up to fill in the blanks to suit the people at the time any given translation was written. lots of it is just fables to set out rules for living a decent life, however no one can or will follow it to the letter. some of the ones who make such a big deal of it on the surface are the nastiest ones underneath, pedophiles, murderers, rapists, im happy im not in their group.
