I understand how we have 1st cousins but how does second cousin, third cousin etc work. Also the whole concept of 2nd cousin twice removed etc? Have always wondered how people arrive at such family connections. Like, my first cousins children are what relation to me?

Hello!

Geneology is confusing and interesting at the same time. Actually, Windyy above got it right.

The "number" of degrees of cousins refers to how far away your generation is to a common ancestor. For example: 1st cousins share the same grandparents as the common ancestor; 2nd cousins share the same great-grandparents.

"Once" or "twice" removed, as I understand it, refers to the generational differences between cousins. Your first cousin's children are also first cousins to you because you and they share your grandparents as the common ancestor, but you and your cousin's children are one generation apart, so you are first cousins, once (one generation) removed.

I hope this helps!
