There doesn't seem to be a category of "animal husbandry".

They are used to controll the bull. You can easily pull it by the nose or tie a rope to it and pull it that way. I know a guy who was attacked by his bull and he used the ring in the nose to stop it by hurting the bull.

Nose is very sensitive part of a bull's body . If you have ring in his nose you can attach a yard long stick to it and control the bull movements. Bull may be very dangerous animal so having ring in his nose will let you direct bull movements.

The ring in a bulls nose has been used for centuries as a point of attachment for a leash or tether. This enables its handlers some amount of control greater than zero over the animals movements. This is done in breeding, display at auctions and fairs, and for a host of other uses when the animal must be constrained in its desire to run amok or do nothing.
Have you ever heard of "Being led around by the nose."

Back in the days, when hearding the bulls it was easier to connect them with the rings, it made it easier to control and wouldn't wonder off. They were also used to attach them to posts or trees, especially during mating season. The cow was lead to him and was easily controlable. They are still used today mainly for the handlers at auctions.

To attach a lead and guide them somewhere, they have a tendency to be less stubborn that way. Wouldn't you be?
