All fried foods absorb some of the oil in which you cook it.
That is what everyone considers un-healthy. That absorbed oil is just extra calories and may contain cholesterol.
To make it more healthy, try baking it if possible. If you are worried about what you are baking drying out - then stick it in a glass cassarole dish and cover it with tin foil to keep the moisture inside as it cooks.

Fried food is really not healthy, but if you do deep fry your foods, then deep fry in olive oil. One of the most healthiest oils to cook with. Just don't use the extra virgin, that kind is mainly for salads, it's used as a dressing

Oven method: Use a non-stick baking pan or a glass pan. Spray the pan with Pam. Place your meat, eggplant , sliced potatoes, or fish in the pan and drizzle a small amount of olive oil over each individual piece. Turn once to brown each side.
Limit the amount of all types of fried foods to once or twice per week.

If you fry foods at a low temp, the food absorbs the oil you're cooking it in. Its best to fry at about 365 for most "Fried food." If you cook food at this temp it shouldn't absorb even half as much. Also try draining oils from fried food with paper towels.

You are right...they are not healthy.
But if you must... then use "Canolla Oil" 0-cholesterol
After frying anything drain on paper towels and pat the oil off the top. It's the only way. I only fry french fries...because they must be fried. Other food can be prepared other ways but not french fries. Bona petite!

Well technically you can't make fried foods healthy but you can be conservative use olive oil instead of other oils. or use canola or corn for fry chicken etc but not much. good luck
