How about a hot air balloon ride or a one hour flying lesson in a small engine plane? Tickets to a favorite sporting event, baseball, football, hockey or maybe a concert, the symphony or local theatrical show. A few shares of stock in a company he admires or one that reflects his interests. Does he read? Who is his favorite author? Find a first edition of a novel or poetry book he'd enjoy having.

There is an organization where if you purchase a donation it is used to buy a village in Country X some livestock. It's like $100 to buy a cow and that cow feeds them for X years because of its milk. $50 get a flock of chickens etc.
Dunno what it's called though...

I'm sure anything that you give him would be awesome. Think about the sort of stuff that he likes and would actually appreciate and either find it in a store or you could even make it for him. Ask your parents if he has any hobbies and try to go along those lines.

Take him out to lunch or dinner. Then talk to him. Tell him how much he has meant to you. Talk about things you remember him doing, or saying, or doing with you. "Remember the time that...." 2
I am 65, and just talking to my own kids, they remember things that I don't. Things that didn't mean anything to me meant sooo much to them. I didn't realize it at the time. We took a flight over the mountains when my daughter was 4. The mts were spectacular. She remembers eating 2 chocolate sundaes on the flight. So talk to your uncle, laugh about memories.
