Hi there...I love Chinese soups...there are three soups we get at the Chinese buffet:
"egg drop" ....it's mainly chicken broth with beaten eggs poured into the hot simmering broth and broken into shreds. It's mild and yummy..some places make it lighter in texture and others make it a dark golden color. I like the lighter one.

the next soup is "hot and sour" This soup is made with a brown broth and has different Chinese veggies added and a vinegar taste and hot pepper flavor....plus soybean tofu in small slices....this one is very zesty...

the 3rd soup we get is "wonton" I've had it in a brown and light colored broth the wontons are dumplings that are filled with pork usually, but it depends on the chef...he might use other fillings in the dumplings...this one is very filling and has a wonderful flavor.

Hope this helps you ..now I want some! lol

hugs from Mama J.

Egg Drop Soup

Egg drop or egg flower soup. They also add eggs to hot and sour soup (my favorite)
For egg drop soup, start off with chicken broth. Add soy sauce to taste. Break an egg in a cup and stir slightly. Add to hot but not boiling broth. Barely stir to cause the egg to swirl as its cooked. When egg is cooked, top with fresh cut green onion. You can also add julienned carrots and mushrooms to the broth and cook for 10-15 minutes before adding the egg. Whatever you do, add egg last and dont cook much more or the egg will be tough and you will have scrambled egg soup!

Hot and sour soup is way more complicated but if thats the one you want, I will send you the recipe. Email me from my profile page if you need to.

Egg drop soup? Although I don't think I've ever really seen it made with veggies in it, unless you count the green onions they put on top.

Egg drop soup. You can either use beef or chicken broth, cornstarch, water, cabbage, carrots (or any vegetables that you want to use that can be slice thinly and suited for that kind of soup), eggs of course.

Boil water with the broth and then add cornstarch to if will thicken, let it boil and stir continuously, add your veggies and then after few minutes add beaten eggs.

Happy eating.

probably egg drop soup. all I know of the making of it is when you add the eggs, you scramble them first, then slowly pour it into the soup base. You can buy soup bases for it at the store.

Egg drop soup

Ingredients
1-1/4 GALLONS CHICKEN STOCK
1 TBSP MAGGI SEASONING
2 TSP SUGAR
1/2 TSP WHITE PEPPER
1/2 CUP CORNSTARCH
1 CUP COLD WATER
6 LARGE EGGS, BEATEN
2 BUNCHES CHOPPED GREEN ONIONS

Method
Bring water to boil and add chicken base, maggi seasoning, sugar and pepper. In a small bowl, make a smooth paste of the cornstarch and water, add to chicken stock, stirring constantly, the mixture should thicken slightly and have a noticeable gloss.

Reduce heat to low, and slowly drizzle eggs into boiling water, stirring constantly to separate into ribbons. Add green onions and SERVE IMMEDIATELY.

Alternate Method
1-1/4 GALLONS WATER
1/4 LB CHICKEN BASE
Substitute the above ingredients for the chicken stock called for in the ingredients.
