Hot Pastrami Spread
2 packages (8 ounces each) cream cheese, softened
1/2 cup sour cream
2 packages (2-1/2 ounces each) thinly sliced pastrami, chopped
1/2 cup finely chopped green pepper
1/3 cup chopped pecans or walnuts, optional
Thinly sliced pumpernickel bread and light rye bread
In a small mixing bowl, beat cream cheese and sour cream until smooth. Add pastrami and green pepper; mix well. Transfer to a greased 1-qt. baking dish. Sprinkle with pecans if desired. Bake, uncovered, at 350° for 25-30 minutes or until heated though and edges are bubbly. Cut out bread with a shamrock-shaped cookie cutter if desired. Serve with spread. I use regular pastrami with this recipe, not turkey...

Reuben Casserole
1 can (14 ounces) sauerkraut, rinsed and drained
1 teaspoon caraway seeds
2 cups (8 ounces) shredded Monterey Jack or Swiss cheese, divided
1/2 cup Thousand Island salad dressing
1-1/4 cups cubed turkey pastrami
5 slices rye bread, cubed
1/3 cup butter or margarine, melted Place the sauerkraut in a greased 2-qt. microwave-safe dish; sprinkle with caraway seeds and half of the cheese. Top with the salad dressing, pastrami and remaining cheese. Toss bread cubes with butter; sprinkle over the top. Cover and microwave at 60% power for 8-10 minutes or until heated through. Now you're talkin..I love Pastrami

Here is an idea....get some party bread the small loaves..rye is best or pumpernickel.

Spread a Grey poupon or creole mustard on one side lightly.
Top with thin slices of pastrami

drain some sauerkraut that is NOT SWEET....there are different varieties....

place a tablespoon of this on top of the meat

then get some Swiss cheese and layer this on the buttered side of the bread.....combine the two pieces and place in a frying pan on medium heat that has been lightly buttered....cook until you see the edges of the sandwich are golden brown and the cheese has melted......

Serve with a nice kosher pickle...and some chips

Makes awesome sandwiches. Get some rye or pumpernickel bread, slather on some cream cheese and swiss cheese. Add a little horseradish and mayo and fresh thinly sliced onion and tomato. Put in a few fresh baby spinach leaves and presto! you have a sandwich that would cost you 8.00 at Jasons Deli or whatever you have in your area.

Ingredients:

3 to 4 lb. pastrami round
1-1/2 cups ketchup
2 cups brown sugar

Directions:
Preheat oven to 300°F. Wash off the pastrami round with cold water and pat dry. Place the round in a roasting pan and smear it with ketchup. Then pack on the brown sugar to get it to stay on top of the round. Cover the pan with foil and put in the oven for 2 hours. Pull off the foil after the 2 hours and roast for 30 minutes uncovered. Let it rest for 10 minutes. Slice against the grain as thinly as possible and serve.

Try this one on a good sandwich roll. With some good pickles on the side and fries.



Toasted Pastrami Sandwiches

1 large onion, thinly sliced and separated into rings
1 medium green sweet pepper, cut into thin strips
1/3 cup reduced calorie clear Italian salad dressing
4 French style rolls, about 4 inches long, split
8 slices fully cooked turkey pastrami
2 ounces thinly sliced provolone or Swiss cheese
3 plum tomatoes, thinly sliced
4 teaspoons tarragon mustard or peppercorn mustard

In an 8 inch skillet cook onion and sweet pepper in Italian dressing until tender. Remove skillet from heat. For each sandwich, place the bottom of a roll on a 12 inch square of foil. Top with turkey pastrami, cheese and plum tomato slices. Spoon on the onion sweet pepper mixture, including any remaining dressing. Spread cut side of the roll top with mustard and place atop the fillings. Wrap each sandwich in the foil, sealing the ends. Heat sandwiches in a 350F oven for 15 to 20 minutes or until cheese is melted. Unwrap sandwiches and serve warm.

Pastrami Chicken Bake

INGREDIENTS:
1 cup uncooked long-grain white rice
1 1/3 cups chicken broth, divided
1 cup water
4 ounces sliced pastrami
5 skinless, boneless chicken breast halves
10 slices bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream
1 (4.5 ounce) can mushrooms, drained

DIRECTIONS:
In a saucepan bring 1 cup chicken broth and 1 cup water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes, or until rice is al dente and firm. Press cooked rice into the bottom of a 9x13 inch baking dish.
Preheat oven to 325 degrees F (165 degrees C).
Place a small piece of pastrami where chicken pieces will be placed on rice. Cut each chicken breast in half lengthwise, wrap each piece in a bacon slice and place atop pastrami and rice. In a medium bowl combine soup, sour cream and mushrooms. Pour over all, then pour 1/3 cup chicken broth around circumference of dish.
Bake uncovered in the preheated oven for 30 to 40 minutes, or until fork tender.

no but you ought to go have that pastrami sub at Quizno's. They give you a double portion of high quality pastrami and it is a great sandwich. Now I am thinking about one.

Here's a couple yummy ones hun :)

INSIDE - OUT SANDWICHES
2 tbsp. cheese spread, any flavor
2 tsp. mayonnaise or salad dressing
1/4 tsp. prepared mustard
2 slices firm-texture bread
1 (2 1/2 oz.) pkg. very thinly sliced pressed smoked chicken, ham, turkey, corned beef or pastrami
If the cheese spread is in the refrigerator, take it out and let it stand on the counter about 15 minutes so it will be easy to mix. In a small bowl use a spoon to stir together the cheese spread, mayonnaise or salad dressing and mustard. Set it aside.
With a table knife, carefully cut the crusts from the bread slices. (Use the crusts to feed birds.) Spread the cheese mixture on one side of a bread slice. Top with the other bread slice. Cut the sandwich into 5 long strips.

For each sandwich, use 2 meat slices. Lay one meat slice on top of another slice so that half of the bottom one is covered. Put one sandwich strip on the edge of the meat. Roll up the sandwich strip inside the meat. Do the same thing with the other bread strips and meat slices to make five. Wrap any leftover meat slices in plastic wrap and put in the refrigerator to use another time. Makes 5.


HOT PASTRAMI
1 slice danish fontina cheese
2 slices french bread
1/4 lb pre-cooked pastrami
honey mustard
butter
garlic powder (optional)
pickles (optional)
Over medium heat, melt butter (1 or 2 pats) in a skillet w/ pastrami; let cook.
In a separate pan (low heat), put buttered French bread w/ cheese on top (add mustard/garlic powder/pickles at this point) cook until cheese melts (if the bread burns, lower flame).

When cheese is melted, layer hot pastrami on bread, then serve. Makes 1.

PASTRAMI AND CHEESE SOUP
2 stalks celery, finely chopped
1 med. onion, finely chopped
2 tbsp. butter
3 tbsp. all-purpose flour
1/4 tsp. salt
1/4 tsp. dried basil, crushed
3 oz. pkg. pastrami, thinly sliced, snip into pieces
3 c. milk
3/4 c. shredded American cheese
1 tsp. parsley
In medium saucepan, cook chopped celery and onion in butter until tender. Blend in flour, salt and basil. Add pastrami; add milk all at once. Cook and stir until thick. Stir in shredded cheese until melted. Stir in parsley. Serve warm. 3-4 servings.


PASTRAMI PIZZA
1/4 c. butter (melted)
1/2 tsp. dried basil (crushed)
1/4 tsp. dried oregano (crushed)
1/8 tsp. pepper
1 (16 inch) loaf french bread (split lengthwise)
1 jar spaghetti sauce
1/4 c. chopped green pepper
1/4 c. chopped olives
2 tbsp. sliced green onion
1 1/2 c. shredded mozzarella cheese
1 lg. tomato
1/4 c. grated parmesan cheese
1 c. alfalfa sprouts
Pastrami
Stir together melted butter, basil, oregano, and pepper. Brush over cut sides of bread halves. Place bread, spread side up on a large baking sheet. Top both loaf halves with pastrami slices. In small bowl, mix spaghetti sauce, peppers, olives and green onion. Spread over pastrami. Bake in a 400 degree oven for 15 minutes. Top with mozzarella cheese, tomato and parmesan cheese. Return to oven. Bake 3 to 5 minutes or until cheese melts. Top with alfalfa sprouts. Slice each loaf half into 8 pieces.

PASTRAMI RYE BREAD DIP
1 tsp. seasoned salt
1 pt. Hellmann's mayonnaise
1 pt. sour cream
1 bag pastrami (Budding)
Green onion (optional)
Combine all ingredients. Add chopped green onion (optional). Let ingredients sit 6-8 hours in refrigerator. Serve in center of a round Kings Hawaiian bread (sweet white bread available at National or Schnucks) or a round rye bread.

ROLLED CHICKEN CUTLETS WITH PASTRAMI
10-15 chicken cutlets
10-15 slices pastrami or corned beef
1 c. oil
Garlic powder
Salt
Paprika
Black pepper
Onion powder
2 tbsp. mayonnaise
Seasoned bread crumbs
In bowl mix 1 cup oil, garlic powder, salt, paprika, onion powder and black pepper together; dip each cutlet in mixture and drip off excess.
In bowl 2 tablespoons mayonnaise, smear mayonnaise on each cutlet on each side. Put slice of ground beef on one side. Dip other side in bread crumbs. Roll up.

Put in baking dish rolled side down. Sprinkle with paprika. Drizzle oil on top. Bake 45-60 minutes at 350 degrees.
