Stir-Fried Okra Recipe
.
INGREDIENTS:
2 cups fresh okra, washed, trimmed, thinly sliced
1 large tomato, peeled and sliced into 8 thin wedges
1/4 cup green onions, sliced, white and green
1 1/2 teaspoons fresh lemon juice
1/4 teaspoon leaf thyme, crushed
1 teaspoon salt
dash pepper
1 tablespoon vegetable oil
2 tablespoons butter
PREPARATION:
Prepare all vegetables as indicated and have ready for cooking. In a small bowl, combine lemon juice, thyme, salt, and pepper.
Heat oil and butter in a wok or large skillet. Add vegetables and seasoning mixture all at once.

Fried Okra
.
INGREDIENTS:
1 1/2 pounds fresh okra pods
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup yellow cornmeal
1 tablespoon all-purpose flour
3 tablespoons shortening, part bacon drippings if possible
PREPARATION:
Wash okra; cut off tips and stem ends. Cut pods into 1/4-inch slices. Sprinkle sliced okra with salt and pepper. Combine cornmeal and flour in a wide, shallow bowl; roll okra in mixture. Sauté okra until golden brown.


Chicken and Sausage Gumbo
.
INGREDIENTS:
3 1/2 pounds frying chicken
1 onion, cut in chunks
celery leaves
1 teaspoon salt
5 cups reserved broth
6 slices bacon, diced
1 pound smoked andouille or smoked sausage, sliced 1/4" thick
1 1/2 cups chopped onion
2 green bell peppers, chopped
2 celery ribs, chopped
3 cloves garlic, minced
3 tomatoes, peeled and chopped, or 1 (14.5 ounces) can diced tomatoes
1 can (approx. 15 ounces) tomato puree
1 package (10 ounces) frozen corn kernels, thawed
1 package (10 ounces) frozen sliced okra, thawed
1 tablespoon fresh chopped thyme or 1 teaspoon dried leaf thyme
PREPARATION:
Combine chicken, the onion chunks, celery leaves, and salt in a Dutch oven or large kettle; add water to cover. Bring to a boil; cover, reduce heat, and simmer about 45 minutes. or until
Remove chicken, reserving 5 cups of the chicken broth; discard onion and celery leaves. Remove chicken from bones; cut into bite sized pieces. Set aside.
Cook bacon and sausage in a large Dutch oven over medium heat until bacon is crisp. Remove bacon and sausage, reserving 1 tablespoon drippings in Dutch oven. Crumble bacon; set bacon and sausage aside. Add onion, pepper, celery, and garlic to Dutch oven; cook over medium heat, stirring constantly, until vegetables are tender. Add chicken, bacon, sausage, reserved broth (should be approximately 5 cups), tomatoes, and remaining ingredients. Bring mixture to a boil; reduce heat, and simmer, uncovered, 1 1/2 hours.

Okra and Corn and Tomatoes
.
INGREDIENTS:
3 cups very cold water
1 tablespoon fresh lemon juice
1 1/2 to 2 cups fresh sliced okra
2 to 3 tablespoons bacon drippings
1 medium onion, finely chopped
1 clove garlic, minced
1 1/2 cups sliced okra
2 cups fresh corn kernels or frozen thawed corn kernels
2 large ripe tomatoes, peeled, seeded, and chopped
salt and freshly ground black pepper, to taste
PREPARATION:
Combine water and lemon juice in a large bowl. Add sliced okra and let soak for about 30 minutes. In a large heavy skillet, heat bacon drippings over medium heat. Sauté onion and garlic until tender.

Add okra and continue cooking for about 5 minutes, stirring constantly. Add remaining ingredients and cook for 10 to 15 minutes longer. If necessary, add water to keep vegetables from sticking. Reduce heat to low, cover, and simmer for 5 minutes longer.
4 to 6 servings.

Crispy Fried Okra
.
INGREDIENTS:
1 pound fresh okra
2 eggs, beaten
4 to 6 dashes hot pepper sauce
1 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon ground cayenne pepper
oil for deep frying
PREPARATION:
Wash okra and drain well; cut off ends and discard. Cut okra crosswise into 1/2-inch slices. In a bowl, combine beaten eggs and hot sauce; add okra and stir to coat all pieces well. In a shallow dish, combine cornmeal, salt and cayenne.

Dip okra pieces into cornmeal mixture to coat well. Heat oil in the deep fryer to 375°. Fry okra in batches until browned, about 4 to 6 minutes for each batch. Drain on paper towels and serve immediately

Curried Okra With Onions
.
INGREDIENTS:
1 pound okra, washed, trimmed, cut into 1/2-inch thick slices
2 tablespoons vegetable oil
1 large onion, quartered and sliced
dash cayenne pepper, or more to taste
1/4 teaspoon ground turmeric
1/4 teaspoon mild curry powder, or to taste
salt and pepper, to taste
PREPARATION:
Heat the oil in a large heavy non-stick or well seasoned iron skillet; add okra and fry for 10 minutes, turning frequently to keep from sticking. When the okra is lightly browned, add remaining ingredients.

Continue cooking for an 3 minutes longer, or until onions are tender

2 cups self-rising cornmeal
vegetable oil


Wash okra and drain well. Remove tip and stem end; cut okra into 1/2 inch slices. Sprinkle okra with salt; add buttermilk, stirring until well coated. Let stand at least 15 minutes; then drain okra well. Dredge in corn meal. Deep fry okra in hot oil at 375F until golden brown; drain on paper towels.

Okra is widely eaten in Asia.

There it is also known as ladies Fingers.

It is a glutinous green vegetable and goes well with many dishes.

Here is a fabulous recipe :-

4 oz yellow lentils
3 tbs corn oil
1tsp onion seeds
2 onions sliced
1/2 tsp fenugeeek powder
1 tsp sliced fresh ginger
1 clove garlic crushed
11/2 tsp chili powder
1/4 tsp turmeric
1 tsp ground coriander
1 green mango, peeled and sliced
1l okra cut into 1inch lengths
11/2 tsp salt
2 tbs chopped coriander
1 tomato sliced

Method:-

Wash lentil till water runs clear, put into pan and cover with water.
Bring to the boil and cook for 30 mins, till just soft but not mushy.

Heat the oil in a wok, and fry the onion seeds till they start to pop.
Lower the heat and add the onions fry till golden brown.

Add the ginger, garlic, chili powder,fenugreek, turmeric and ground coriander. Stir .

Add the mango slices and the okra, and stir.

Add the salt, red chilies and fresh coriander. Cook for three mins, or, until the okra is soft.

Add the lentils and sliced tomato, cook for three mins.

Serve.

Just simmer the okra for 10 minutes in a medium fire, with water covering the okra entirely. Slice the okra in half vertically, then put enough amount of fish sauce to taste.

*Depends on what you like. Obviously, more fish sauce, more tasty.

southern style okra....

* 1 1/2 cups sliced okra
* 1/4 cup chopped onion
* 1/2 green bell pepper, chopped
* 2 tablespoons vegetable oil
* 1 can (14.5 ounces) tomatoes with juice, or 1 1/2 cups tomato puree
* 2 teaspoons sugar
* 1 tablespoon flour blended with 1 tablespoon cold water
* 1/2 teaspoon salt
* 1/4 teaspoon pepper

PREPARATION:
Cook okra in boiling salted water 10 minutes. Drain. Brown onion and green pepper in salad oil. Add tomato juice, cook slowly 5 minutes. Add okra and remaining ingredients. Cook over low heat 5 minutes longer.

The Southern Country way of fixing okra is to wash it, cut it up in rounds, batter it with flour, salt, pepper and fry it until it is golden brown. Serve with sliced tomatoes and biscuits and whatever else you may want like onions and pintos and fried chicken. Now that is Southern Eating. lol

My favorite is DONT! Okra is gross.
You can dip it in an egg wash and then in flour or cornmeal and deep fry it. Or you can boil it, but it gets real slimy. You can pickle it, but it gets slimy too. I dont think God meant for okra to be food. Maybe you could donate it to a farm for the cows or just compost it. Yukkkkkk

Not to be a smarty pants... but..... head on over to the frozen section, grab a bag of breaded okra and don't forget the ranch dressing............ Just deep fry it and salt immediately after removing from the grease. Then dip in the ranch dressing and enjoy.

Simply dust in flour, dip in egg, then Panko(Japanese bread crumbs. In the asian section of most stores). season the flour and egg with some salt and pepper. you can pan fry or deep fry. Keeping it simple is the most delicious way to enjoy the okra or any food for that matter!
