For the good old fashioned granny type of bean soup. Buy ham hocks. You do not really need to soak the beans, jbut dump them in a callander and rinse them .Put the hocks in a large cook pot pour in the beans, add one chopped oinion then fill the pot almost to the top with water. The ham is already salty so just just use about a teaspoon of pepper.turn the burner on low and cover with a lid.Get an early start becase it takes all day. after it gets good and hot, stir occassionally. When the beans break open thats when the soup is done.

Its not an easy recipe as far as time goes.
1 pound dry great Northern beans
1/2 pound cooked ham, diced (can also use hamhocks)
1 small onion, diced
1/2 cup brown sugar
salt and pepper to taste
1/4 teaspoon cayenne pepper
1 tablespoon dried parsley
Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.
Return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne and parsley and water to cover. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, until beans are tender. Add more water if necessary during cooking time.

Beans and some water in a pot. Bring it to a boil. Turn off the heat. Let it stand, covered, for an hour. Turn the heat back on, bring to a boil, and back the heat off until the water is just simmering. Leave it covered.
Somewhere in there, cut up your ham and toss it in. Simmer.
A few hours later, ham and beans. The ham is salty. Wait until you taste it to season.

This is a lot easier......
BAKED BEANS:
2 large cans Campbell's Beans Pork and Beans
2/3 cups packed brown sugar
1/2 cup ketchup
1 teaspoon mustard
2 teaspoons baking soda (optional)
Mix all ingredients. Taste if sweet enough. If not, add more brown sugar. Top with 4 to 6 pieces of bacon. Bake at 350 degrees for 1 to 2 hrs.
=================================
Old-Fashioned Baked Beans
1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper
In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed. Yield: 12-16 servings. http://recipes.tasteofhome.com/eRMS/recp.aspx?recid=2082
Usually directions come with a ham........
Baked Ham with Pineapple
1 fully cooked bone-in ham (6 to 8 pounds)
Whole cloves
1/2 cup packed brown sugar
1/4 cup pineapple juice
1 can (8 ounces) sliced pineapple, drained
5 maraschino cherries Place ham in roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes; insert cloves into diamonds. Cover and bake at 325° for 1-1/2 hours. Combine brown sugar and pineapple juice; pour over ham. Arrange pineapple and cherries on ham. Bake, uncovered, 30-45 minutes longer or until a meat thermometer reads 140° and the ham is heated through. Yield: 16-20 servings.

Soak them overnight, yes, but not in salt water...just plain. In the am, drain and put aside.
In skillet with olive oil, onions and garlic, cook over med heat until translucent.
In large pot, add beans, cooked onions and ham product of your choice. Add water to desired consistency, but not too much...you can always add later if necessary. Cook covered for 1 hour on med heat.
Season to taste...yum yum
