The best way is to draw the moisture out of the potatoes by getting a bowl of cold water with some ice cubes in it and 1 Tbls of salt.
Cut the potato in wedges about 12 wedges per medium sized Russet potato.
Drain in colander and then dry with paper towels.
Spray vegetable spray on them and bake at 450 degrees on flat sheet with a wire rack placed over it. Sprinkle with pepper and salt.
The key is to bake on a wire rack so that potato wedges are not lying flat on the pan and use high temperture oven.
I have a perforated pizza pan I use for my potato wedges.

In a food storage bag, fill it with 1/3 cup flour, 1/3 cup Parmesan cheese, 1 tsp. paprika, salt, pepper and garlic powder. Soak the potato planks in 1/3 c. milk, and put a few at a time into the bag and coat them and put them on baking pan and drizzle them with with 1/4 c. melted butter, margarine or olive oil. Bake in a 400 oven for about 20 minutes.

Crispy Potato Wedges
Yum!
4 medium russet potatoes, cut into large wedges
1 tablespoon vegetable oil
1/4 teaspoon black pepper, freshly ground
1/8 teaspoon salt
2 garlic cloves, minced (optional)
reduced sodium ketchup, preferred (optional)
1 batch
1. Place potatoes in a large bowl; add cold water to cover and let stand 15 min minutes.
2. Preheat oven to 425.
3. Spray a nonstick baking sheet with vegetable cooking spray.
4. Set aside.
5. Drain potatoes in colander.
6. Spread on a double layer of paper towels.
7. Cover with a second layer of paper towels.
8. Press down on the towels to dry potatoes.
9. Transfer potatoes to a clean large bowl.
10. Sprinkle with oil, pepper, and salt; toss gently to combine. Arrange seasoned potatoes in a single layer on the prepared baking sheet.
11. Bake potatoes for 20 minutes.
12. Using a spatula, turn potatoes; sprinkle with garlic. Bake until golden, about 20 minutes, turning baking sheet after 10 minutes for even browning.
13. Serve immediately with ketchup on the side.
14. Add 1/2 teaspoon of paprika when tossing potatoes with spices.
15. Bake as previously directed.>.

After marinating in olive oil & seasonings (garlic salt, pepper and paprika), bake at 400 degrees for about 25 minutes. At the last 5 minutes, stir around and sprinkle with salt. Salt is an agent that will assist in the browning.

Slice your wedges and place them in a plastic bag (zip bag or whatever) drizzle about two table spoons of Olive Oil into the bag and season with what you want. Shake it up to coat the wedges and place in a single layer on a baking sheet

Bake on high heat. 400 to 450 degrees. Rub them with oil before you bake them and sprinkle with salt. (unless you bought frozen wedges...)
