The blade or green leaves of the plant are the part that is poisonous. They contain high concentrations of oxalic acid crystals which can cause serious problems when eaten. These crystals can cause the tongue and throat to swell, preventing breathing (see Health Information). The edible petioles (stalks) are up to 18 inches long, 1 to 2 inches in diameter, generally somewhat hemispherical in cross section.

I thought the stem was edible and the leaves were poisonous.
At least, whenever I've had rubarb, it was made with the stalks.
I suppose they might have been prepared with something to
make them less toxic, but I don't think so.

Stem is not poisonous. That is the part that you cook, combine with strawberries and make a great pie. The red part, skip most of the green. It is the leaf that will make your tummy hurt very bad

I don't know if the LEAVES are poisonous... look it up online, lol. But I know Rhubarb is awesome! Love that haven't had it in forever... it's nice n sweet ... oh my... now look what you got me craving...

you eat rhubarb! the stem is the (fruit) so to speak - it's tart and bitter tasting - but made into a pie or mixed with strawberries in jam is excellent tasting.
NOT POISONOUS!

the stems are not poisonous. the leaves are.
the stems when chopped up make great rhubarb custard pie, stewed rhubarb etc etc.
don't confuse commercial rhubarb with the little wild stuff though - nasty.
