I don't know what a HP 2100 is, but I have an HP 1210 and a HP 1425.
If you want to change text, you have to scan as OCR. This will change it back into a digital (like Word) document. Edit it, then print.
However, be prepared for some gliches. Every little mark will scan, maybe as a squiggle (tilde). There may be an incorrect word or number. You must read it carefully.

By change the document, do you mean edit the text, you need a scanning software like text bridge

You need some OCR (Optical Character Recogniton) software for your scanner. It allows you to save the scan as a text\document file that you can edit.

You need OCR software to convert the scanned document to .txt/.doc , edit it and then print it.

this type of printer have a software called IRIS OCR, it comes on the CD that came with this printer, it can handle all your needs, convert scanned image to text then copy it to Microsoft word or excel , then you can make all changes you need, and print your new document

when you scan a document you only get a picture of it........ you can't edit the document text.
