i made chicken paninies for supper yesterday my sister loves them!u should try it. Its really easy
INGREDIENTS:
1 focaccia bread, quartered
1/2 cup prepared basil pesto
1 cup diced cooked chicken
1/2 cup diced green bell pepper
1/4 cup diced red onion
1 cup shredded Monterey Jack cheese

DIRECTIONS:
Preheat a panini grill.
Slice each quarter of focaccia bread in half horizontally. Spread each half with pesto. Layer bottom halves with equal amounts chicken, bell pepper, onion, and cheese. Top with remaining focaccia halves, forming 4 sandwiches.
Grill paninis 5 minutes in the preheated grill, or until focaccia bread is golden brown and cheese is melted.

Here's a really delicious recipe, everytime I make it I get rave reviews. People think I can actually cook (although I really can't and hate too anyway)

Ingredients:

5-6 Carrots (peeled & sliced)
1-2 Onions (peeled & cut)
1-2 Large Portabella mushrooms (chopped up)
1 small package of sundried tomatoes (rehydrate in microwave with boiling water for a couple of minutes)
1-2 Chix Breats

1 bottle of white or red cooking wine
Water
Cous Cous or rice
Olive Oil
Garlic Powder

Sautee the 1st 5 ingredients 1 at a time, each one separately. Use the olive oil to sautee while adding as much or as little garlic powder as you like to taste. I usually use a lot.
When done, combine together in a large pan. Add about 3/4 bottle of cooking wine and about 1/2 bottle worth of water.

Allow to boil for a while and then simmer until almost all of the liquid is gone

When done sauteeing, turn off the heat and let cool. Make the rice or cous cous.

Serve this chicken dish over the rice or cous cous and add some garlic bread and a salad for a nice touch.

Tastes even better left over. Enjoy!

I'm going to throw a chicken breast in the pan with a little oil. Slice some red and yellow peppers, red onion and add to the pan. Drizzle a little Terayaki Sauce over it all. and cook on medium until the chicken is done. On the side, I'll get a bag of Success rice going, while I steam some broccoli in the microwave. When the broccoli is done, I'll take it out of the mikey,.salt and pepper it, top it with some shredded cheddar, cover it and let it sit til the cheese melts. I'll fill a glass with ice and sweet tea, put everything on the plate, and eat every bite of it!

I am making a roast chicken, with some pan fried roast potatoes and vegetable, some Hawaiian rolls and a beverage and prolly some ice cream from Cold Stone Creamery for dessert :) That and my boyfriend is coming over *grin* WOO!
