Put them in ice water immediately after taking them out of the boiling and then peel them over a colander with the water running, as the water helps slough the shell away from the egg so you end up with a nice smooth surface. Also, dont forget to put salt in the water; I dont know why, but when I worked at restaurant thats what we always did and the eggs always turned out perfect.

I boil mine for 10 minutes or so, then take them off the stove, pour out the boiling water and just run cold water over them. I sometimes will let them soak in the cold water.
Don't let them sit too long.
Tap them agains the counter top and them light apply pressure with the egg cupped between your hands, then start peeling at the top and around, the shell should mostly come off in one piece w/o removing the egg white. Works for me everytime.

Put salt in the water, then put the eggs in. You have to boil them until little bubbles start coming off of them. No sooner, no later. That usually takes ten minutes. Then put them in cold water immediately. Then you just roll them out on something flat, peel, and enjoy!

First salt ur water...then poke a hole with a sewing pin at the smallest end. This will help you greatly as far as peeling. And also peel after cooling versus when the "material" is still expanded from cooking. The egg will sort of 'shrink' underneath the shell when it is cooling.

Make sure you boil the eggs instead of cooking them slowly over low eat. They will peel easier. And as another answer states, don't use fresh eggs.

Place eggs in a pan, add a tablespoon of salt, Fill pan with water over top of eggs, place on fire and bring to a boil. Once boiling, set timer for 5 minutes. When timer goes off, turn off fire and let eggs set for 4 or 5 minutes in hot water. Drain hot water off of eggs, add a tray of ice cubes over eggs and fill pot with cold water. Let eggs set in cold water until ice has melted then remove eggs and dry. Eggs should peel very easy. Does for me every time.

The first answer is correct. Fresh eggs when hardboiled are very hard to peel. Two weeks old is perfect.

You have to start with eggs that are not fresh. Buy eggs 2 weeks before boiling them.
