It is not unusual to go to school for two years to thirty months and then end up at an exclusive restaurant that requires you to be an assistant chef for six months to a year. A friend of mine works at a Hilton Hotel and was required to go to another location for six months. But once all that mess was over; the job is paying great and he is the boss.(head chef)

I think 2 years is a good guideline, although there are different programs out there that can be more or less, depending on the type of certification you want.

Typically a two year degree. Then years of apprenticeship before becoming a head chef.
