I always use good old reliable garlic salt and fresh ground pepper when I grill any kind of meat or fish.
If I'm doing a tomato based dish like pasta or a home made pizza, it's fresh basil.
Dessert... brown sugar with cinnamon or nutmeg.

My favorite spice fresh or dried is Thyme. It has a wonderful woodsy flavor that I find delicious but not overwhelming. It is part of a traditional French Bouquet Garni along with parsley and bay. A Bouquet garni is used as the herbal seasoning to almost all traditional French cooking.

Salt and Pepper are the ultimate for me... very simple, but for a fresh HERB i like basil... very clean, classic, and goes with a large variety of things... you can grow some fresh in your own kitchen even and use it straight off the plant

I love dill weed. Man does it ever make great chicken salad, potato salad, slaw, devil eggs. It is just the best. I also really like rosemary. Great on baked chicken. And whatabout parlsey? Love the stuff. I also like cilantro. Man alive that stuff is good in pico de galo. I think I spelled that right. Anyway. spices are wonderful.
