I know the rain can have adverse effects on pies & candy, but I've never tried canning in it. Help!!!

Well, if you're going to process them in a water bath, they're gonna get exposed to plenty of humidity and it seals 'em right up. The main point is to keep plenty of heat on the seals and keep everything nice and hot. What's going on in the air outside the cans isn't a big problem.

But, that said, once they're canned, keep them in a cool, dry place and make sure the lids don't have rust or corrosion on them. The bands aren't a big problem if they get rusty--you can just take them off once you're done processing the jars, but the lids have to be clean and rust-free to keep a good seal. Just make sure you follow the proper guidelines for processing whatever you're processing (check with your county Agricultural Extension office for ?s and publications) and they should seal just fine. And get a fan--it's gonna be hot and steamy while you're canning and the humidity in the air won't help.

it shouldn't! my mom and i have canned for years, and i don't think the humidity should have that much effect on your canning as long as you follow your recipe to the T. good luck. :-)

no problem-just keep them in a dry spot- it is amazing how strong a home-made seal is!!
