The Jewish legislative system is of course based on the Written Mosaic Torah, but the laws in practice are determined by the Oral Torah. Both were transmitted simultaneously at Sinai.
The Oral Torah consists of the Mishna, Talmud or Gemara, and various generations of commentators who continue explicating and applying the law to this very day. This is why Judaism has such a clear view on relatively modern issues such as medical ethics. The Written Torah serves as the starting point and the Oral Torah applies precedents set by the Written Torah to new environments that did not exist previously. Note that it is not the Torah that is evolving, rather man's understanding of the Torah must change so that he can adapt to new situations. When a baby who previously knew only how to crawl learns to walk, the principle of motion did not change, rather his application of how to bring about this motion in a different setting.
This said, the application of the law has changed along with the changing needs of man. For example, in the ninth or tenth century (i believe), a prominent rabbi, Rabbi Gershom, declared polygamy to be forbidden after noticing that the social patterns of man had changed and polygamy was no longer appropriate for modern times. There are many other examples of such adaptations.
Also, it must be noted that "a Sanhedrin (governing body consisting of seventy wise men) that put to death a single life within a seventy year span was called a murderous Sanhedrin," i.e. the picture your question paints of a death-obsessed mob-culture is based on your own prejudices and misinformation rather than reality. One who took time to actually read the law would find that the conditions a case would have to meet in order to warrant death are so strict that rarely were the met (needing sufficient witnesses at the scene of the crime, proof that the criminal was warned immediately prior to the crime about the ramifications of that specific crime, proof that the criminal admitted ahead of time to his understanding of the ramifications of the crime, etc.).
So... In answer to your question: When the Jews rebuild the temple, they will continue applying and maintaining the laws, just as they do today. The most significant changes though will be the reinstitution of the Sanhedrin as an organized legislative body, the return of the temple-centered consciousness and the practice of certain agricultural laws.
Also, it might be helpful for you to note that "the coming of Jesus" you mentioned is part of a later religion known as "Christianity" and actually had nothing to do with Jewish law.
Open some books before closing your mind.

I'm jewish and you asked about jews, so I'll answer from a jewish perspective:
slavery = Very likely
polygamy = very likely
stoning to death = yes, though I doubt it'll happen since there will be universal knowledge of G-d, so no-one will commit such a serious offense. but hey, I guess it could happen.
witches = will be killed
children being killed = it will return to its original status.
homosexuals = if they have homosexual relations will be punished
However,
slavery, in judaism, is very different from slavery you hear about. a quote from the talmud expresses it well, "someone who buys a slave buys a master!" Slaves had rights, sometimes even greater than that of the "master". for example, if there's only one pillow, the "slave" gets it. It wasn't the torturous experience which we normally associate with slavery.
polygamy == what's the problem with that? I'd be glad to have it back now!
death penalty = I suppose you think the chair or lethal injection is much better? or perhaps you're just against the death penalty. OK, you can think as you like, but is it that difficult for you to accept that another nation might accept it? Additionally, the death penalty was not common. Again a quote from the talmud expresses this: "A court which executes someone once in 70 years is a bloodthirsty court". in other words, it was a rare occurance.
witches = you like witches?
children being killed = the talmud has a debate as to whether this will ever happen, or if it would happen just once. In other words, not something you should expect to find.
homosexuals == yea, it'll suck to be them.
however, we're not going to rebuild the temple until the messiah arrives. If the messiah arrives and it is self evident that Judaism is correct and G-d exists and expects us to follow his rules -- if all that happens and you still have a problem you can get back to us on it.

Just to inform you, slavery, polygamy, and stoning to death are practices that some people still use today, sadly enough. Many things have obviously changed since way back in the era you are referring to. People have grown to see cruelty and not take death as lightly as some. The bible is something you are sopposed to learn from and cherish, not try to reinvent and live in. It's sick that you think children who make mistakes should be killed, slavery allowed, and senseless slaughter renewed. Please try to live in the present.

Ummm, no. The Jew's have never shown any desire to force others to their beliefs. Also, they would't have time even if they did want to, soon after the temple is rebuilt, the AC will desecrate it. The only ones I know of who would try to force those laws on others are already doing it, its the islamic countries, hence the murder of the two men in Somalia who commited the terrible crime of watching soccer in the newly conquered country.

Modern jewry, has gone far beyond that these days. So no, that will not happen.
But you don't need to single out Judiasm to find horrific things done in the name of religion in eons past... or present. Unless you particularly want to find things that Jews did wrong 3000 years ago to confirm your hypothesis that you don't like them.

Yes.
When the Temple is rebuilt, Israel will attempt to force everyone to either live under or accept Mosaic law. Which includes all the things you mentioned.
Ariel Sharon "accidentally" killed his son, so perhaps they already do follow those laws.
