Technically, the seedless ones *do* have seeds, but they're small and insignificant, so they seem seedless. Not that it makes you feel any better.
Personally, I despise watermelon and I don't eat it with or without seeds. But I understand the issue--you want good old fashioned produce. Seek out farmer's markets and roadside stands and you-pick farms--demand better produce! Julia Child said that when she said that people should ask for fresh produce and unusual ingredients, people would storm down to their grocery stores and demand what Julia put in her recipes. It totally worked! Be persistent and stand up for what you want--if you can convince produce providers that you'll buy a certain product, they'll give you what you want. They want your business, and if you can convince them that seeded=more sales, they'll get seeded watermelons.

in the summer, everyone wants seedless watermelon because it can be easier to eat...but i agree, ones with seeds have a better flavor! usually if you go to your local produce market they should have some. ;-)

We got one with seeds, no better. I think they've stopped growing the varieties with flavor. they've gone to the ones with longer shelf life, faster growth, or something. Flavor doesn't seem to be part of a requirement for a good watermelon anymore. The "thump" says ripe and good to eat, but the taste says blah.

Simply market demand, from consumers that disliked the seeds and the seed producers not wanting new varieties from seeded melons.
The first is the biggest reason. If you want to grow your own, grow heirloom varieties and save the seed.
