Because he wants friends. He's not going to force a friendship with us and so he gave Adam and Eve something to choose from and he gives us things to choose from. The forbidden fruit gave them a knowledge that was not necessary for their happiness. By eating it, sin entered the world. Now we can take pleasure in mortal sin or we can avoid sin and win the goal of Heaven. The forbidden fruit represents the fleeting joy of taking pleasure in mortal sin. This kind of joy does not last and it makes us unhappy and if we persists in sin, it sends our soul to hell for eternity. If we leave the forbidden fruit alone (mortal sin) we may have a seeminigly joyless life, but we will gain unmeasurable joy for eternity in Heaven. What happiness is there in winning if there is no test?

It wasn't a test and God is not sadomasochist. The fruit was a necessary step in the creation of the human being. There's no humanity when there's no freedom, and freedom implies the ability to discern, make decisions and carry on with the construction of history. A big bravo! to the woman who was the one clever enough to engage nature in dialogue thus pushing the human being to point of discerning between good and evil. At the end, God put the human beings outside of the garden because, said God, "now the human being is like one of us knowing good and evil." Eve took the step needed for the creation of human being to be brought to a more satisfactory level.

If God knows everything he would know that they would fail the test .So if it's all the literal truth then the whole thing was a set-up.
If ,however,it is a mythic tale to demonstrate the folly of disobeying God then it starts to gain the value of all myths.

his creation of man was one of love. he created man with the ability to choose, and with free choice comes the ability to follow or to be independent. The tree wasn't poisonous..it wasn't special physically... it was a test of obedience.. would the very first couple want to follow the creators authority, or disobey it? the fact they were created means they had a measure of submission owed to the one who brought them to life, so , with the gift of being able to choose their course in life, would they want to choose the path that showed their love for God, or their own...sadly, man chose their own, and this is why things are the way it is today...just like rebellious kids, they didn't like submission to their creator. God also knew there was Satan who had evil intent, so what would the first couple choose to do...follow a godly way by being obedient and living forever in perfection, ...or follow a rebellious satanic direction...? look what happened ...

He just told them not to , so they would and Satan would play into his hands.
