Sopa is when you use fideo or other noodle and you fry it in a little bit of oil until it turns golden brown. Then you add either tomatoe sauce or El Pato and water, don't forget to season with salt, pepper, garlic, onion and cumin and let it simmer covered until the noodles are soft. You can turn it into dinner by adding cooked hamburger or other meat or a can of veggies or fresh veggies.

PS. SOmetimes rice is called sopa

-Sopa de tortilla
- Sopa de lima

The English translation for “sopa” is soup. Sopa is a holy offering made during the Portuguese fiestas. This is an old Portuguese recipe that is a national tradition. As a young girl, I always looked forward to going to the fiestas. Everyone sang, music played and people danced in the church courtyard. It was a time of great fun. My sister-in-law got this recipe from Grandfather. I am thankful that she was forethoughtful to ask for it.

Sopa

1 tbl. pickling spice
4 lb. beef roast
4 qts. water
2 bay leaves
4 clove garlic, minced
4 large sprigs fresh mint
1 large onion, sliced
1 c. tomato sauce
1 tbl. pickling salt
½ c. red or white wine
1 tbl. butter
1 sprig fresh cilantro
3 heads cabbage, cut into wedges, remove core
1 loaf dry French bread, to serve with soup

Wrap pickling spice in a cloth and tie with a string. Drop into a large pan with beef, water and all other ingredients except cabbage. Simmer at least 12 hours or until meat falls apart. After about 6 hours of cooking add cabbage; add more water if needed. You want lots of liquid.

The liquid is important as the soup will be ladled over the dry French bread and the soup will be “sopped up”.

You mean sopressa....otherwise known as "soupy"?
If so it's an Italian sausage very similar to pepperoni or salami except smaller (about the thickness of pepperoni) and darker. Very spicy and hard as far as texture goes. Great sliced with some good Italian bread, olive oil for dipping and some cheese and olives.
Oh...don't forget a glass of chianti.
